How I cook with meat

In Georgian dishes meat goes with lots of herbs and spices: ojakhuri is pork neck and veal browned and baked with potatoes in a clay pan, chashushuli is beef stewed with tomatoes and khmeli suneli, and khinkali get a beef and pork filling. For a quick dinner there’s crispy ginger beef in a sweet and spicy sauce — 30 minutes.
