Ham and Eggs: Classic English Breakfast Recipe

Ham and Eggs: An English Breakfast

How to make ham and eggs for breakfast?

Cut the ham into pieces up to 3 mm thick and lightly fry them in 2 tbsp of oil, spaced apart in the pan. Then stir 6 eggs lightly without beating, pour them over the ham, season and fry over low heat without a lid for 4–5 minutes, until done the way you like. This English breakfast serves 2 and takes 20 minutes.

American scientists have convincingly proven that fried eggs with ham make the one right breakfast. And as Mrs. Bomowski, the mother of police officer Joe Bomowski in the movie “Stop! Or My Mom Will Shoot”, said, breakfast is the most important meal of the day.

There is no point arguing, especially when breakfast isn’t a cup of coffee with a cheap cigarette but a proper, full breakfast. In my opinion, England took breakfast most seriously. An English breakfast is a substantial ritual that takes attention and preparation, a whole philosophy, if you like.

Sometimes it’s oatmeal, which, as Engineer Garin said, is food for athletes and moral people. Then come toasted bread with butter and jam, tea, and ham and eggs. The last is probably the tastiest.

Ham and eggs. This is not even scrambled eggs, but something between an omelet and sunny-side-up eggs.

Ham and eggs is a completely universal recipe, cooked all over the world. I was a little surprised when, in a Bulgarian cafe where we had breakfast, I found “hemendeggs” on the first page of the morning menu. I didn’t understand at first, and only after asking again did I hear: fried eggs with ham, English-style.

Ingredients

2 servings

  • Eggs 6
  • Ham 100 g
  • Fresh dill or parsley 4-5 sprigs
  • Vegetable oil 2 tbsp
  • Salt, ground black pepper to taste

Step-by-step recipe

Ham

  1. To make fried eggs with ham, you need the very best ham. But ham in its best form is not very familiar to us. Hardly anyone can confidently recognize real ham. For the older generation, ham is more associated with “chopped ham” sausage and the “Assorted” meat roll. By the way, the roll is not the worst option. Ham can easily be replaced with good sausage, baked pork or smoked gammon, but then it is already eggs with sausage.

    Fresh eggs, ham, parsley.
  2. Cut the ham into pieces up to 3 mm thick.

    Cut the ham into pieces.
  3. Pour vegetable oil into a frying pan, heat it over medium heat, and fry the ham pieces in it. Fry only briefly, so the ham barely browns, heats through well, and gives off a wonderful smell.

  4. Spread the ham pieces over the pan evenly, with gaps between them, so that in the end the dish can be cut with a fork and knife into portions the size of the ham pieces.

    Fry the ham briefly.

Eggs

  1. Carefully crack the eggs into a bowl and stir them lightly with a few strokes so the whites and yolks mix a little. There is no need to beat them; that’s excessive.

Stir the eggs with a fork.
  2. Pour the eggs over the ham, trying to fill all the gaps completely.

    Pour over the ham.
  3. Season with salt and pepper to taste.

  4. Fry over low heat without a lid until the eggs are done the way you like, usually 4-5 minutes: the whites should set and turn white.

The dish can be cooked to different degrees, from slightly runny to well done. It’s a matter of taste. I like the eggs a little “alive” on top.

Fry over low heat without a lid.
  5. Finely chop the dill or parsley and sprinkle it over the dish.

Serving

  1. Take the eggs off the heat, slide them onto a plate and serve.

Don’t try to lift the eggs with a knife or spatula; they will break anyway. They simply and easily slide from the pan onto the plate. Try it. It usually works the first time.
