Here are my recipes with chicken and beef liver — pâtés, a warm salad, a liver cake and fried liver. A good place to start is the warm chicken liver salad with pears and soy sauce, or chicken liver pâté with vegetables and butter.

How I cook liver

I prefer liver that has never been frozen. For beef liver with onions thin slices are dredged in flour and fried in butter, and for beef liver pâté I add salo and vegetables.
