Fish and Seafood Salads (2)

Fish and seafood salads are usually light and easy. Seafood cooks in just a few minutes, so the total time is short: even a simple mix of fresh lettuce, herbs and shrimp is delicious. Many fish salads are made with canned, smoked or salted fish, like the famous Mimosa or tuna salad, mixed or layered. A warm seafood salad of fried squid, octopus and shrimp with greens and mussels steamed in wine is a truly beautiful dish.

Herring under a fur coat, the classic Ukrainian shuba salad: herring, onion, potatoes, carrot, eggs, apple and beets with mayonnaise. The right layer order.
Warm, spicy Mexican-style salad of mussels and red kidney beans with carrot, onion, bell pepper, tomatoes and chili. A great appetizer or side for fish.
