Meat salads hold a special place among appetizers: the meat makes them hearty, and many are closer to a main course than a starter. They often include boiled or roasted vegetables and a rich dressing. If you are short on time, make a simple vegetable salad and add some diced ham: cold cooked meat goes well with all kinds of chilled ingredients, and many of these salads are just as good served warm.
