Borscht and other soups

The heart of Ukrainian cooking is Ukrainian borscht made on meat broth. Besides the red one, there is green borscht with sorrel, a lean borscht with mushrooms and beans, and in summer a cold beet soup called kholodnyk. Borscht is served with pampushky — soft garlic buns.

Varenyky, deruny and pancakes

Cherry varenyky, crispy potato deruny with sour cream, thin nalysnyky with filling and syrniki made of cottage cheese. The ingredients are simple, but the dishes need a practiced hand — that is why every step is shown in photos.

Salo, kholodets and homemade preserves

Pork cracklings, homemade sausage, baked pork belly and kholodets belong both to the festive and the everyday table. In winter it is completed with preserves: fermented pickles, fermented tomatoes and sauerkraut. River fish is loved too — try crucian carp in sour cream.
