
Fried Crucian Carp with Onions - Easy Pan-Fried Recipe
My favorite kind of fishing is sitting by a quiet lake with a float rod, catching small crucian carp. Small ones, specifically. As a rule, they bite eagerly, take almost any bait, and do so surprisingly often.
My mother told me that before I was born, my cousin in the village used to catch small crucian carp with a rod, and they would fry them in oil in a skillet and eat them like sunflower seeds. Maybe that's why I have such a passion for this dish.
So whenever I manage to get some fishing in, crucian carp fried with onions is almost a treat. At so-called “paid” ponds, the owners often forbid releasing small crucians, considering them a trash fish that gets in the way of raising market carp. So if you want to and don't get distracted, you can catch a whole bucket of small crucian carp.
The crucian carp (Carassius) is a fish of the carp family, probably the most common one in our waters. Being found almost everywhere makes the crucian a universal target for anglers.
And don't ask me how to catch a bucket of crucians. Friends say there have been fishing trips when, on the way home, they simply released several kilograms of small crucian carp into a river or a wild pond. And that's not counting what they gave away to neighbors, relatives and even complete strangers.
Small crucian carp fried in vegetable oil is a simple, affordable dish. The hardest part is cleaning the fish. Then a few simple spices, a coating of flour, and into the pan. The final stage is braising the fish with fried onions.

- Small crucian carp 1 kg
- Onions 2-3
- Vegetable oil 0.5 cup
- Wheat flour, salt, ground black pepper to taste
Step-by-step recipe
- Cleaning small crucian carp is rather tedious, but it has to be done. Scale the fish and remove the gills and guts. The heads are often cut off, since there's practically nothing to eat in them. That said, tiny crucians deep-fried like chips are eaten heads and all, as a beer snack.
- Rinse the fish very thoroughly under cold running water. Season with salt and pepper to taste, especially inside the belly cavity, and leave the fish in a cool place for 30 mins so the salt soaks in.
- Peel the onions, slice them into thin strips, and fry in vegetable oil until deep golden.
- In a shallow bowl, mix the flour with a little salt and ground black pepper. Proportions are to taste; in fact, you can use plain flour. Dredge the prepared crucians in the flour mixture and fry in vegetable oil in a very hot skillet.
- Turn the fish only once. So let it brown well on one side, and only then flip it.
- When the crucians are fried through and the crust is golden and crispy, turn the heat under the skillet down to the lowest setting. Spread the fried onions over the fish in a single layer. Add more salt and pepper if needed. Cover the skillet with a lid and braise the crucians with the onions for another 10 mins over the lowest heat.
- Crucian carp fried with onions is an incredibly tasty dish, and it's so simple that you can make it even if you can't cook at all.
- Serve the fried crucian carp with onions right away, while still hot. The perfect side dish is mashed potatoes.
