Here are my poultry recipes — chicken, duck and turkey, from soups to oven bakes. A good place to start is Georgian chkmeruli, fried chicken in a milky sauce with plenty of garlic, or chicken satsivi — wings in bazhe walnut sauce.
Wings I mostly bake in the oven, with different sauces and spices: Old Bay wings, Alabama white sauce wings and crispy wings with curry and sesame. For patties I like dark meat: chicken thigh patties take 45 minutes, and chopped patties mix breast and thigh meat.

In our family the holiday dish is most often roast stuffed duck with apples; on an ordinary day — duck with potatoes. From turkey I make a clear aspic and a stew.
