Chicken Thigh Patties - Juicy Ground Chicken Recipe with Photos

Chicken patties are probably the easiest and quickest way to get a chicken dinner on the table. Chicken cooks very fast. An ordinary chicken breast cutlet is done on the grill in 10-15 minutes, no more. And patties made from ground chicken mixed with spices and herbs, plus a bit of bread soaked in milk, take no special cooking skills at all.

Patties are usually made either from white chicken meat, the breast, or from dark meat. Since a chicken has plenty of dark meat, most often a whole bird is cut up and the skin and excess fat are removed. The wings, giblets, neck and other parts without much meat on them are set aside for soups. The breast is separated and kept for other dishes. Then all the dark meat is carefully trimmed from the rest of the bird and turned into chicken patties.

White meat, the breast, can be used to make Pozharsky chicken cutlets. This is an old dish that, as legend has it, was first cooked by Yevdokim Pozharsky, an innkeeper in the town of Torzhok. Whether that is true or made up, nobody knows. But chicken cutlets with a crispy crust are still made today, quite possibly by the original recipe. By the way, Alexander Pushkin wrote about Pozharsky and his cutlets in a letter to a friend. Though who knows, maybe those were pike cutlets.

There are hundreds of recipes for chicken patties. Chicken is a great choice for ground meat in general. But keep in mind that chicken is high in fat and protein, and it is not as dense as pork or beef. While a mature, though not too old, bird is best for soup or broth, young chicken is the better choice for patties.

These days you do not need to buy a whole bird to make chicken patties. Since only the dark meat is needed, you can simply buy a pack of chicken thighs or whole legs. They hold most of the dark meat, and it is easy to cut off the bone. The patties are fried over high heat until golden brown, then either braised in a sauce or finished over low heat under a lid.

To make chicken patties for a dinner for two, 3-4 chicken thighs without the drumsticks are enough. You end up with 350-400 g of ground meat, which is plenty for a good meal.

Chicken patties are usually served with a side dish, such as braised vegetables or mashed potatoes. I prefer rice with vegetables or just plain boiled rice. Sometimes, for the holidays, we serve roast chicken with fried rice. It is a very tasty side. Which one to choose is up to you.

  • Chicken thighs 3-4
  • Cream 2 tbsp
  • Breadcrumbs 2 tbsp
  • Vegetable oil 3-4 tbsp
  • Salt, ground black pepper, nutmeg, dried herbs to taste

Step-by-step recipe

  1. For patties made from dark meat, chicken thighs are the best cut to choose. There is one large bone, a little cartilage and skin that comes off the meat very easily. Chicken thighs are sold by weight or in trays of 4-8 pieces. To make chicken patties for a dinner for two, 3 or 4 thighs are enough.

  2. If the chicken thighs are frozen, thaw them first. Carefully pull off the skin and remove any leftover fat, membranes and cartilage. Cut out the bone with a sharp knife. Rinse the meat under running water and pat it dry with paper towels: extra moisture in the ground meat is not needed.

  3. Put the prepared meat through a meat grinder. Transfer the ground chicken to a deep bowl so that it is easy to mix.

  4. Add salt, ground black pepper and a tiny pinch of ground nutmeg to the ground chicken. Add 0.5 tsp of a dried herb mix: oregano, basil, dill. Mix thoroughly so that the spices are evenly distributed.

  5. Add 2 tbsp of cream to the ground chicken. The cream gives the meat a mild flavor and makes the patties special. Mix the ground chicken and cream thoroughly.

  6. Add a small amount of breadcrumbs or, better still, stale white bread grated on a fine grater. How much you need depends on the mixture. For this amount of ground chicken it usually takes no more than 1.5 tbsp of breadcrumbs, and most often up to 1 tbsp.

  7. The mixture should be slightly firm but not stiff.

  8. With wet hands, shape oblong patties and place them on a wet plate.

  9. Heat the vegetable oil in a frying pan. If the oil has a strong smell, let it heat through for a bit. Roll the shaped patties in breadcrumbs or in the same grated stale bread that went into the mixture. Use as much breading as the meat will hold.

  10. Place the breaded patties in the hot oil and fry over medium-high heat until golden brown on both sides. This usually takes about 3-4 mins per side.

  11. Then turn the heat down to the minimum, cover the pan with a lid and keep frying the patties for 15 minutes. Turn them 1-2 times along the way. If the patties are not too thick, the total cooking time comes to about 25 mins, which is quite enough for the chicken to cook through.
  12. Arrange the finished patties on plates and add the side dish. For the side we decided to make fried rice. Basmati rice, boiled until done beforehand, is fried in butter with 1 tsp of good soy sauce.
