
Pan-Fried Duck with Potatoes and Onion Recipe
One of the tastiest home-cooked dishes is duck fried with potatoes and onion. The recipe is quite simple. What matters is that the pieces of meat are cooked through and tender: duck meat is fairly dense, so it needs careful frying. The dish is rich and filling, just right for a hearty dinner.
Boneless meat is, of course, the ideal choice, and breast and thigh meat work best. That said, if you are cooking for a crowd, you can cut the whole bird into small pieces and fry it with a larger batch of potatoes.
For frying, choose starchy potatoes: the dish turns out tastier. Such potatoes hold their shape well when cooked in fat, yet stay slightly fluffy inside. You can add more onion if you like. Frying in a mix of olive oil and butter gives the dish a special flavor.

Step-by-step recipe
- Duck fried with potatoes is a filling dish that is easy to make. You can use a whole duck cut into pieces. For dinner for two, a single duck breast is enough: remove any bits of bone, but the skin can stay on. The meat needs no special preparation. If the breast was frozen, thaw it in advance by moving it from the freezer to the fridge.
- Melt the butter in a frying pan and add the olive oil: this blend of fats is very aromatic and noticeably improves the flavor of the dish. Cut the duck breast into large cubes or slices, as you prefer. Place the duck pieces in the hot fat and fry, turning often, until lightly browned on all sides. Don't overcook the meat: it will finish cooking together with the potatoes.
- Peel the onion. You can use more if you like, and the duck with potatoes will be even tastier. Slice the onion lengthwise into thin strips, then add it to the duck and stir. Fry everything together over medium heat for 2-3 mins until the onion softens. Don't add any spices or salt yet, and don't let the onion start to brown.
- Peel the potatoes and cut them into small cubes. Put the potatoes in a bowl, season with salt and pepper, and leave for a few minutes so the salt dissolves. Then add all the potatoes to the pan and stir. Keep stirring for a few minutes so the pieces get coated in fat. From here, the duck and potatoes cook over low heat under a lid.
- Turn the heat down to just below medium, cover the pan with a lid and keep frying the duck and potatoes. The dish will be ready in 15-20 mins. Stir from time to time so the potatoes don't stick to the bottom of the pan and burn. Cooked this way, the duck pieces become tender and juicy, while the starchy potatoes keep their shape and turn fluffy inside.
- The dish is done when the potatoes are done, so taste them. The meat will certainly be cooked by then. Serve right away while it's hot. If you like, sprinkle the potatoes and meat with a little finely chopped parsley or green onion. A vegetable salad on the side makes the meal even better.
- If you want the dish a little spicy, add a peeled and crushed garlic clove and a bit of fresh chili together with the onion. Besides black pepper, a pinch of savory and a little sweet smoked paprika are a great addition.
