Chicken Pizza with Mozzarella and Tomato: Homemade Recipe

Chicken Pizza with Mozzarella and Tomato: Homemade Recipe

I don't know whether Italians argue about “which came first, the chicken or the pizza?”, but chicken pizza is really something! You could argue yourself hoarse about that, and about whether pizza is bad for you. Yet pizza's popularity around the world breaks every record.

Pizza (Italian: pizza) is Italy's national dish: a round (who said shape matters?) open pie with all kinds of toppings.

Pizza started out as food for the poor, which you can hardly say about it today. Some pizzas are named after famous people: remember the Margherita, named after Margherita of Savoy. Or the Diavola, named, apparently, after you-know-who.

Either way, the secret of pizza's appeal and popularity lies in how simple it is to make and how freely you can play with flavors. The topping can be almost anything. Ordering pizza couldn't be easier. Order, wait for delivery with your mouth watering, and then sometimes get something quite different from what you expected.

What's stopping you from spending a little time and making a pizza just the way you like it? For example, chicken pizza (pizza al pollo).

Ingredients

34 cm pizza

  • Pizza dough 400 g
  • Chicken breast 1 fillet
  • Tomato sauce 2-3 tbsp
  • Tomato 1 fillet
  • Mozzarella 100 g
  • Parmesan 50 g
  • Pickled baby onions 2 tbsp
  • Olives 10
  • Basil 3-4 sprigs
  • Seasoning: oregano 1-2 pinches

Step-by-step recipe

  1. Since the chicken breast won't have time to cook through in the oven, boil it first. Put a bay leaf, black peppercorns, allspice berries and cloves to taste into 1 l of water. Add a little salt and simmer the chicken breast for 15 minutes. Take the cooked breast out of the broth and let it cool. Chop it finely or pull it into shreds with your hands.
  2. Make the pizza dough. I recommend the dough we adopted long ago, with great success, as our go-to for pizza.

  3. Once the dough has risen, knead it briefly and stretch it into a round 5-7 mm thick. Lightly grease the pan with olive oil and lay the dough in it. Be sure to prick the dough with a fork in several places. For a fluffier base, let it rest for 15-20 mins under a towel.
  4. Spread homemade tomato sauce over the dough, especially carefully along the edge where the rim is.

  5. Lay out the sliced mozzarella, or grate it on a coarse grater.

  6. Arrange thinly sliced tomato and sprinkle with dried oregano.

  7. Sprinkle with chopped basil. This is optional, since the finished pizza will be garnished with fresh basil.

  9. Add pitted green olives halved lengthwise and small pickled onions. Chicken pizza needs a light touch of tang.

  11. Place in an oven preheated to 180-200 °C. Chicken pizza bakes for about 20 minutes. But since every oven is different, keep an eye on the color of the crust and adjust the time.

  12. Garnish the finished chicken pizza with basil. Scatter whole basil leaves and cut the pizza into 6-8 slices with a pizza cutter.
  13. Serve chicken pizza hot.
