Pan-Fried Chicken Legs with Wine Sauce Recipe

Here's how to make fried chicken legs that are simple and really tasty. As a kid I used to wonder why Baba Yaga's hut stood on chicken legs. I don't even know why, but that question kept me busy for a long time.

Farmyard chickens held very little culinary interest for me. I hated them! In a good way.

At my grandma's in the village, chickens were a natural disaster, always up to some mischief. They were chased out of the vegetable garden more times a day than anyone could count. From a cooking point of view, farmyard chickens only turned into carcasses in autumn or, as a last resort, when someone fell ill. Broth from a home-raised chicken easily replaces antibiotics and painkillers and packs a powerful dose of vitamins. I can't find any other reason why chicken broth always helps.

For obvious reasons, a farmyard chicken and a supermarket ready-to-cook bird are two very different things. Still, chicken remains an affordable and filling option for lunch, breakfast and dinner.

You can make anything out of chicken, even dessert. Well, almost anything: a fruit drink is probably out of the question. It's good if you have a nice, easy recipe in your head or in your grandma's cookbook. You buy chicken legs and cook them. But quite often it isn't that simple.

You can buy chicken parts. Say, 6-8 wings by weight, and you can make delicious crispy oven-baked wings or chicken pilaf. Bought a few chicken breasts? That's a great excuse for chicken schnitzel or chicken Kiev. Bought chicken drumsticks? That's the most versatile chicken meat of all.

Chicken legs, meaning the drumstick and thigh together, carry the most meat. One piece is enough to fill you up if you add a side dish.

So you've bought chicken legs at the store, and the obvious question comes up: how do you cook them so they taste good? There are plenty of good, easy recipes, each better than the last. But the simplest way is chicken legs fried in oil in a pan. Pan-frying is a pretty easy way to cook chicken. The meat fries in hot fat, which gives it a beautiful golden crust without any special tricks.

Ingredients

  • Chicken legs (thigh and drumstick) 2
  • Flour 3 tbsp
  • Vegetable oil 50 ml
  • Butter 30 g
  • Dry white wine 100 ml
  • Spices: salt, ground black pepper, dried aromatic herbs, sweet ground paprika, nutmeg, balsamic vinegar to taste

Step-by-step recipe

  1. Supermarkets usually sell chicken legs two to a pack. The perfect amount for dinner for two, unless you want to overeat, of course. Then again, sometimes you can eat quite a lot of these legs.

  2. If the chicken legs are frozen, thaw them first. Better not in the microwave or under hot running water. Move the tray of frozen chicken legs from the freezer to the fridge. Overnight.
  3. Carefully remove the skin from the chicken legs. Again, that's a matter of taste: many people prefer to fry them skin-on. Use a thin knife to pierce the thigh and drumstick right through at the thickest part. This way the chicken legs cook and marinate better.

  4. Season the chicken legs with salt and pepper and sprinkle with a dry mix of aromatic herbs, ideally one with rosemary in it. Everyone has their own herb blend for fried chicken; I usually use a mix of basil, savory, rosemary and sage.

  5. Put the chicken legs in a deep bowl or plastic container. Pour over a mixture of half a cup of dry white wine and 0.5 tsp of balsamic vinegar. It doesn't matter that the marinade doesn't fully cover the chicken legs. Put the meat in the fridge to marinate for 30 minutes. Then turn the chicken legs over in the marinade for the same amount of time. Chicken marinates very quickly, though not all the way through.

  6. In a dry deep bowl, combine 3 heaped tbsp of flour and 1 tsp of sweet ground paprika, add fine salt to taste, pepper and a pinch of ground nutmeg on the tip of a knife. Stir the mixture with a fork until evenly combined.

  7. Take the chicken legs out of the marinade. Don't pour the marinade out (!), you'll need it for the sauce. Pat the chicken legs dry with paper towels to soak up as much liquid as possible. Dredge the meat in the prepared flour and spice mixture, making sure there are no bare spots. Transfer the chicken legs to a dry plate. Keep the flour and spice mixture for the sauce.

  8. In a deep sauté pan or skillet with a lid, heat 50 ml of vegetable oil. Get the oil hot enough to give off a light white smoke. Place the prepared chicken legs in the oil.

  9. From here on, make sure the meat doesn't burn. Fry over high heat for a few minutes until a golden crust forms.
  10. Turn the chicken legs over. Reduce the heat under the pan to a third, cover with a lid and keep frying. Turn them every 3-4 minutes so the fried chicken legs don't burn. The total frying time is up to 20 minutes.

  11. While the chicken legs are frying, let's make the sauce. This is entirely optional: many people prefer ketchup from a packet. In a separate saucepan, melt a small knob (about 1 tbsp) of butter.

  12. Reduce the heat to medium. Add the flour and spice mixture left over from breading the chicken legs in small portions, 1 tsp at a time. You should get a slightly thick mixture, like a dough.

  13. Straight away, add the remaining marinade 1 tbsp at a time, stirring the sauce in the pan with a wooden spatula and breaking up any lumps. It's easy. Keep adding marinade until the sauce is as thick as you like. Let the sauce simmer for 4-5 minutes. Season with salt and pepper to taste. You can add a pinch of dried herbs. Turn off the heat under the sauce and let it stand, covered, until the chicken legs are done.

  14. Place the finished fried chicken legs on plates and drizzle with a little sauce. Pour the rest of the sauce into a gravy boat and serve it on the side.

  15. Fried chicken legs are very tasty drizzled with a little lemon juice; one lemon wedge is enough. You can garnish the dish with fresh herbs

  16. I don't think this dish needs a side. But a fresh vegetable salad would be just perfect.
