Smoked Chicken Salad with Cheese and Vegetables

Smoked Chicken Salad with Cheese and Vegetables

This homemade smoked chicken salad uses ordinary, easy-to-find ingredients. It is a good alternative to Olivier salad, since you can dress it with mayonnaise or with a light olive oil dressing. The distinctive feature of the dish is the large amount of salad greens, up to half of the volume.

Pretty much any smoked chicken meat will do: fillets or thighs. You can also buy a whole smoked chicken. Just take the meat off the bones and, preferably, remove the skin.

The salad comes together very quickly, because all the ingredients are ready to eat. You only need to slice the meat and vegetables, add the prepared salad leaves and toss. The dressing can be almost anything: mayonnaise, vegetable oil or a mixture based on it. The salad doesn't need chilling or soaking, so you can serve it right away.

Step-by-step recipe

  1. A simple smoked chicken salad is a snack that comes together very fast and needs no preparation of the ingredients beforehand. What's more, bagged salad mixes are sold in stores and don't even need washing, as they are fully ready. Smoked chicken is also easy to find in shops. Decide in advance what dressing you will serve it with.

  2. If you are using a whole chicken or thighs, remove the skin, separate the meat from the bones and cut it into strips. Smoked chicken fillet simply needs to be cut into strips. Put the meat into the bowl in which you will mix the salad. Finely chop the green onion stalks and add them to the bowl. Peel the sweet salad onion, white or red, and cut it into thin strips.

Cut the chicken fillet into strips and add the green and sweet onion.
  3. Wash the fresh, juicy cucumber and pat it dry with a paper towel. Cut it lengthwise into four pieces, then crosswise into thin slices. Don't chop it finely, as you would for Olivier or vinegret. Most of the ingredients here are cut coarsely. For the cheese you can use a semi-hard one, such as Emmental or Gouda. Grate it on a coarse grater and add it to the salad together with the cucumbers.

Grate the hard cheese into the salad and add the sliced cucumber.
  4. If you bought a bunch of fresh lettuce, wash the leaves and pat off the drops of water. Ready-made salad mixes are much easier: just open the bag and add the leaves to the salad. If you like, tear the leaves with your fingers into smaller pieces. Don't cut them with a knife, though, as they will release juice, which is undesirable. Season the salad with salt and black pepper.

  5. For many people mayonnaise is the most acceptable salad dressing. It's easy to make your own for a single use, or you can pick from the big selection in any store. For this amount of ingredients, 1-1.5 tbsp of ready-made sauce is enough. Or, even tastier, make a vinaigrette: mix 2 tbsp of good olive oil with 0.5 tsp of balsamic vinegar. Whisk the mixture with a fork, pour it over the salad and toss.

  6. Serve the salad in salad bowls or on a medium-sized flat plate. To keep the smoked chicken salad from spreading over the plate, shape it in a cooking ring and then carefully lift the ring off. Before serving, you can add a few herbs to the plate and sprinkle it with finely grated Parmesan and pine nuts, which tastes wonderful.

  7. If you like, add juicy vegetables such as radishes or celery, or fruit such as an apple or a firm pear. This will vary the flavor of the dish. You can also make a spicy version by adding sliced fresh chili and young garlic. Crunchy croutons are another good addition.
