Here are my fish recipes — sea and river fish, fresh and canned: sea bream, pike, zander, crucian carp, trout, mackerel, herring and sardines. A good place to start is the canned sardine fish soup, ready in an hour, or oven-baked sea bream with tomatoes.

How I cook fish

Whole fish I usually bake: sea bream goes into the oven on a bed of eggplant, tomatoes and bell peppers, and a trout is boned, filled with fried onion and fennel and baked with potatoes. Fillet I cover with a topping — zander under cheese with sour cream — or turn into fish meatballs in tomato sauce in 45 minutes.

If the fish is from the river

Stuffed pike and small crucian carp, 120–150 g each, baked in homemade sour cream.

If you need a salad or an appetizer

Herring under a fur coat, Mimosa salad with sardines and apple, cod liver salad and forshmak — chopped herring with green apple and egg.
