Canned Sardine Soup – Easy Fish Soup Recipe

When I was little, soups at home were sometimes made with canned food standing in for the stock – stewed meat, fish in oil, in tomato sauce or in its own juice, various kinds of salted meat. I can't say I'm a fan of such dishes, but I always liked canned fish soup. To be honest, with so much fresh fish around these days, a homemade ukha is the more usual choice, and canned fish soup got somewhat forgotten. The other day we made this soup the way it was cooked a long, long time ago.

By and large, canned fish soup is what they call an empty-fridge dish. A few ordinary vegetables for the broth, fresh herbs, spices and a can of fish packed in oil or in its own juice. As a rule, one can of fish is enough for a soup for a small family. Any fish will do – sardines, saury, sardinella, and if you can get it, salmon or pink salmon. Just don't use the “smoked” kinds, such as sprats.

It is worth noting that there is a whole industry in the world producing canned soups, fish ones included. All you have to do is open the can and heat it up. Homemade canned fish soup is extremely easy to make. Since you can hardly cook a stock from canned fish, we make the soup with a good vegetable broth. And you can take more vegetables than usual. The canned fish goes into the soup right before the end of cooking, just as in saury soup.

Canned fish is what you see in shops most often, and it is very popular. Besides the fish itself, parts of fish are canned too – liver and roe. There are also all sorts of seafood in long-life cans. By the way, the word comes from the Latin conservo – to preserve. When choosing a can of fish for a soup, go for a fish that is fragrant but not overpoweringly so. Because of its strong smell I didn't buy mackerel. I preferred a can of sardines in oil.

Canned fish soup turns out great with pink salmon or salmon in its own juice, chunk tuna or herring. It is better to cook the soup with large pieces of fish, although many people prefer to mash it.

Cook a good broth to your own taste from whatever vegetables you have. Then again, people in the know told me that in places where canned fish soup is popular, vegetables and fresh herbs are a luxury. But I hope that carrots, onions and potatoes can be found everywhere. Other vegetables are optional, if you have them. Whether to add the liquid the fish sits in is up to you. If the fish is in its own juice, the liquid from the can will only do the soup good. And even if the fish is in oil, there isn't that much oil in there anyway.

  • Canned sardines in oil 1 can
  • Onion 1
  • Carrot 1
  • Potatoes 2-3
  • Celery stalks 1-2
  • Green onions 2-3
  • Parsley 3-4 sprigs
  • Salt, black pepper, bay leaf, dried chili pepper to taste

Step-by-step recipe

  1. When they are in season, I recommend making canned fish soup with young vegetables. The soup will be especially tasty. A few small new potatoes, so that they don't have to be cut up, a young onion and a carrot. If you have one, a fleshy stalk of celery. And plenty of fresh herbs for serving – parsley and green onions.

  2. As I said, we settled on a can of sardines in oil. There isn't much oil in the can, so we didn't drain it and added the whole contents to the soup – the fish and the liquid. We also didn't break up the fish or mix it with the liquid. The soup came out with large pieces of sardine and a pleasant fish flavor and aroma.

  3. Pour 4-5 cups of cold water into a pot. Peel the potatoes and add them to the water. Dice the peeled carrot and cut the onion into thick strips. Dice the celery stalk as well, just like the carrot. Add the dried chili pepper and 1-2 bay leaves, and season very lightly with salt and pepper. Bring the water to a boil and cook the vegetable broth for about 30 mins at a gentle simmer.

  4. If you have decided to make the soup with mashed fish, mash the fish with a fork so that it blends with the liquid in the can. If you want large pieces in the soup, leave everything as it is. Either way, first take the peppercorns and the bay leaf out of the can – as a rule, they are always there. Add the contents of the can to the boiling vegetable broth. Add more salt and pepper to taste. Bring the soup to a boil and cook for 2 mins. The soup should not bubble hard, only simmer gently. Then take the pot off the heat and let it stand for 10 mins.

  5. While the soup is resting, prepare the herbs. Chop the green onions. Pick all the leaves off the parsley sprig and chop them with a knife. Ladle the finished fish soup into bowls. To keep the pieces of fish intact, it is better to put the vegetables and fish into the bowls first and then pour in the broth. Sprinkle the soup with green onions and parsley.

  6. Canned fish soup should be served right away, while it is hot. Serve it with fresh or toasted white bread. If you like, add some more coarsely ground black pepper.
