How I cook with ham

Fresh ham is best in big pieces: for oven-baked pork I cut a bone-in ham into large chunks and serve it with pickled onion and adjika. Sliced cured ham goes on pizza — prosciutto pizza and Mimosa pizza with sweetcorn and béchamel.
