Here are recipes with salo, Ukrainian cured pork fat. A good place to start is kapusniak, which I serve with a spoonful of crisp fried salo in each bowl, or pork cracklings with onion, ready in 15 minutes.

How I cook with salo

Mostly I render it for frying: pork with onions is fried in rendered fat, cracklings with fried onion top millet porridge, and for beef liver pâté I render salo first.
