Ham and Cheese Pizza Recipe with Parmesan

Ham and cheese pizza is a common choice among the many toppings typical of meat pizzas. Almost any ready-to-eat cured or cooked meat made from a whole piece of meat will do for pizza: balyk, ham, smoked meat, various kinds of jamón or prosciutto.

The original name of Parmesan (Italian Parmigiano Reggiano) comes from the two regions of Italy where this hard cheese was produced: Emilia-Romagna, namely Parma and Reggio Emilia. That is where the name “Parmigiano Reggiano” comes from, though we are more used to “Parmesan”, the French way. This cheese is sprinkled over pasta and added to risotto and various soups.

The cheese is also eaten just as it is, as a snack or dessert, combining Parmesan with fruit. By the way, Parmesan is delicious with pears, nuts and, above all, wine. Italians firmly believe that cheese made outside the old region can’t be called Parmesan, yet many cheeses in Europe and the US compete quite well with Italian Parmesan, and even win gold medals at exhibitions.

The thousand-year history of making Parmesan is believed to have begun with ancient monks who devised a way to store cheese for a long time, which made it so popular. For many people Italy is associated with a mountain of Parmesan inhabited by people who do nothing but cook macaroni with cheese, as in Boccaccio’s “Decameron”. They even say that some banks in Italy are happy to lend against the security of Parmesan wheels.

A pizza needs cheese: mozzarella, Parmesan and so on. Parmesan is best of all.

Let’s please everyone. Ham and cheese pizza, with Parmesan and ham (Pizza prosciutto e parmigiano), will appeal to all. All the more so since it’s a homemade pizza, not a bag of chips with ketchup.

Step-by-step recipe

  1. Tomato sauce, rather than plain tomato paste, is best made yourself; it’s easy and quick. Tomato: 1; sweet red pepper: 1; garlic; olive oil: 1 tbsp; salt; ground black pepper. Remove the seeds from the pepper. Scald the tomato, then peel it and remove the seeds. Peel the garlic. Put everything in a blender and purée. Pour into a hot frying pan with olive oil, then add salt and pepper. Simmer until the moisture has evaporated and the sauce is thick.

  2. Cut the onion, preferably a sweet one, into thin strips and marinate it in 1 tbsp wine vinegar for at least half an hour. Then rinse the onion with water. Grate the Parmesan on a fine grater.

  3. Slice the ham thinly. Cut pitted olives in half lengthwise; olives with pits can be used whole. Cut the tomato into thin slices without removing the seeds. Chop the basil leaves finely.

  4. Make the dough following the recipe Pizza dough using 2 cups of flour (260 g). After the dough has risen, knead it down and stretch it into a flat round 5-7 mm thick. Place the dough on the pan, lightly greased with olive oil beforehand. Be sure to prick the dough with a fork in several places. Let the dough rise for 15-20 mins.
