Khachapuri, khinkali and soups

Cheese bread khachapuri and juicy Georgian khinkali dumplings. The best-known soup is kharcho, a spicy beef and rice soup.

Meat and poultry

Chicken chakhokhbili, chkmeruli — chicken in garlic sauce, and chicken satsivi in walnut sauce. Meat dishes include spicy chashushuli beef stew, ojakhuri — meat roasted with potatoes, and chanakhi, a lamb and vegetable stew baked in a pot.

Appetizers, vegetables and sauces

Eggplant pkhali with walnuts and herbs and the spiced vegetable stew ajapsandali. Meat is served with sweet and sour tkemali sauce, and the festive table is not complete without Tbilisi salad.
