Here are my recipes with apples — cakes and pies, pancakes, salads and duck. A good place to start is sharlotka, a sponge cake with a whole kilo of sweet-tart apples, or apple strudel.

How I choose apples

For baking I take firm, tart apples that keep their shape, such as Reinette Simirenko or Granny Smith. They go into shortcrust apple pie, American apple pie and tarte Tatin, where the apples are caramelized.

If you want breakfast

Apple oladyi with grated apple in 30 minutes, or syrniki with semolina and apple.

If apples go with meat or salad

Duck stuffed with apples and rice, Waldorf salad in 10 minutes, and Mimosa salad, where apple goes in with the sardines.
