Here are my beet recipes: borscht hot and cold, salads, pickled beets and appetizers. A good place to start is borscht with mushrooms, with nothing of animal origin, or beetroot salad with sour cream dressing.

How I cook beets

For salads I bake beets instead of boiling them: boiled beets turn watery and lose flavor. That’s how I make beet salad with garlic, beets with prunes and walnuts and beet caviar — in the microwave it’s even faster.

If it’s hot outside

Kholodnik on beet broth with soured milk, and cold borscht from young beets with their tops — on hot summer days we make it very often.
