How I cook with cottage cheese

For syrniki the cottage cheese should be fresh and firm, “dry” — that is how I make the best syrniki, ready in 40 minutes. For vanilla syrniki I choose low-fat cottage cheese with a grainy texture. The quickest dish here is lazy vareniki: the filling is mixed right into the dough, 20 minutes.
