Cottage Cheese with Garlic and Herbs in Lavash
Homemade cottage cheese with garlic and fresh herbs is the perfect quick appetizer for the first shot. Like salo with garlic, for example, but that’s the highest level of the craft.
I remember that at our favorite shashlik place in Kyiv, and not only there, the very first and best appetizer was cottage cheese with herbs and garlic in lavash. In some places it’s called “shor”. It’s much easier to make than a baked cottage cheese casserole.
Strictly speaking, “salted shor” is something between cheese and cottage cheese, made by boiling whey and pressing it under a weight. But I don’t think anyone around here goes to such lengths.
The only thing that matters is to choose fresh, natural cottage cheese, not some mystery stuff from a store-bought pack. The same goes for sour cream. All the ingredients must be absolutely fresh.
Everything you need is available and inexpensive. And making this cottage cheese and garlic appetizer takes hardly any time at all.
Ingredients
4 servings
- Homemade cottage cheese 250 g
- Sour cream 2-3 tbsp
(30–45 g) - Garlic 2-3 cloves
- Dill 0.5 bunch
- Salt, black pepper to taste
- Thin lavash 1 sheet
Step-by-step recipe
Cottage cheese with garlic and herbs
You’ll need a deep bowl, a fork and a fine grater.
Put the cottage cheese in a deep bowl. Mash it with a fork until smooth.
Add salt, quite a lot, and pepper. The appetizer should be well seasoned.
Use only the green tops of the dill: chop them finely and add to the cottage cheese. It’s nice when there are plenty of herbs. You can add some cilantro too.
Peel the garlic, grate it on a fine grater and add to the cottage cheese. You can take even more garlic. Alternatively, chop the garlic finely with a knife.
Add some good, rich sour cream, ideally homemade. Just a little, 2 tbsp, otherwise the cottage cheese will turn runny. Store-bought works too, if it’s good quality.
Mix everything thoroughly with a fork until smooth.
You can also simply spread this cottage cheese and garlic spread on bread.
Appetizer in lavash
Cut the lavash into pieces a little bigger than your palm.
Put a tablespoon of the cottage cheese (12 g) on a piece of lavash. Fold over one side to make a bottom so the filling doesn’t leak out.
Roll it up into a tube. You can also wrap it like shawarma.
You can eat the cottage cheese and garlic appetizer right away.
Not only is it the perfect appetizer for the first shot, it’s also an excellent preventive against the flu.
