
Homemade Assorted Pizza with Different Toppings
A homemade assorted pizza baked in the oven, with different toppings for every member of the family, is the answer when tastes are just too different. Simply give everyone their own patch of dough and let them top it however they like.
No other food can compete with home cooking, not even restaurant food. Professionally cooked meals from restaurants and cafés are hard to come by, simply because you can't eat out all the time, and I won't even mention fast food, although the reasons to avoid it are somewhat different. But, as it turns out, cooking at home from simple ingredients is easy and even fun.
Sadly, in recent years all sorts of frivolous places have been hiding behind a “home cooking” sign. For example, they might bake a “homemade” pie in a café's factory-like kitchen, which is a bit like selling you hake and calling it pike-perch. The pie will be tasty, but it won't be homemade. If your loved ones prefer pizza with different toppings, nothing stops you from making an assorted one that takes into account your family's tastes, wishes and even quirks. Besides, baking a pizza with lots of toppings is a fascinating process that kids especially love.

We gave it a try. It was great!!! In the end, our homemade assorted pizza turned into an incredible mix of pizza diavola, pizza margherita and an amazing mushroom pizza. Everyone was happy! Not a single slice was left.
Ingredients
34 cm pizza
- Dough
- Premium wheat flour 2 cups
- Instant yeast 5 g
- Salt 1/2 tsp
- Sugar 2 tsp
- Olive oil 3 tbsp
- Pizza sauce
- Tomatoes 2-3
- Garlic 2 cloves
- Sugar 1 tsp
- Olive oil 1 tbsp
- Salt, black pepper, oregano, chili to taste
- Toppings
- Salami 50 g
- Button mushrooms 4-5
- Fresh basil 2-3 sprigs
- Olive oil 2 tbsp
- Parmesan 50 g
- Tomato 1
- Black olives 6-8
- Green olives 5-6
- Hot pepper 1
- Cherry tomatoes 5-6
- Oregano to taste
Step-by-step recipe
- Making the dough
- This yeast pizza dough is simple and always turns out, and the crust of the finished pizza can be thin or fluffy, crispy or soft, as you like. The pan diameter is 32-34 cm.
- You'll need a large bowl for kneading the dough. Sift 2 cups of premium wheat flour (260 g) into the bowl. Add 0.5 tsp of fine salt and 2 tsp of sugar, and sprinkle in half a packet of instant dry yeast, 5 g. This kind of yeast, meant to be mixed straight into dry flour, is usually sold in 11 g sachets. Stir the dry ingredients with a fork so they are evenly distributed.
- Pour 180 ml of lukewarm water into a glass; warm cold water in the microwave for 10-15 seconds. Add 3 tbsp of olive oil to the water, stir and pour it into the flour right away. Knead a soft dough, adding flour in small portions. The dough should be very soft and not stick to your hands. Roll the dough into a ball, dust the bottom of the bowl with flour and place the dough on it. Cover the bowl with a towel and leave it in a warm place for 40-45 mins.
- The dough rises well. After this time, punch it down, adding a little flour. Cover the bowl with a towel and put it back in a warm place.
- Prepare a pizza pan by greasing it with 1-2 tsp of vegetable oil. Turn the dough out onto a floured table and press it with your hands into a circle. Carefully transfer the dough to the pan, stretching it to the rim. Try to form a thicker, rolled edge around the border.
- Sauce for homemade pizza
- If you don't have a good tomato sauce, I suggest making one from fresh tomatoes. Tomato sauce made from ripe tomatoes tastes much better. You need red tomatoes with as few seeds as possible (there are special meaty varieties) and without white parts inside. The sauce from 2-3 large tomatoes is enough for one pizza. If the tomatoes are large enough, you can simply peel them with a knife. Or put them in a bowl, pour boiling water from the kettle over them for 2-3 mins, then rinse with cold water and remove the outer skin, which looks like plastic film.
- Finely chop the tomato flesh with a knife or blend it into a puree. Heat olive oil in a saucepan and fry 1-2 peeled and crushed garlic cloves in it. Then discard the garlic. Add the finely chopped hot pepper to the oil and pour in the tomato puree. Season the sauce with salt and pepper, and add 0.5 tsp of dried oregano and 1 tsp of sugar. Simmer covered over the lowest heat: the sauce should become thick, fragrant and, most importantly, smooth.
- Toppings
- And then, as the TV hero Alf used to say, the fun for the whole family begins: laying out the toppings on the pizza according to everyone's individual tastes, however each person likes it.
- We divided the dough circle into 4 sections.
- Spread the pizza sauce over the dough.
- For the first layer, we laid out sliced tomatoes and salami: two sections of tomatoes and two sections of salami.
- Sprinkle all sections with chopped fresh basil leaves and dried oregano.
- Next, add the black and green olives. This gives you four combinations: salami and black olives, salami and green olives, tomato and black olives, tomato and green olives.
- Next, add the cherry tomato halves, with the seeds removed first. Scatter raw button mushrooms, cut into thin slices. Everyone wanted mushrooms, so our homemade pizza had mushrooms all over.
- Sprinkle the whole assorted pizza with finely grated Parmesan. Drizzle with olive oil.
- To visually mark the borders between sections with different toppings, lay out thin strips of seeded, lightly fried hot pepper.
- Place the assorted pizza in an oven preheated to 180-190°C and bake for up to 20 mins. After 15 mins, check whether it's done, judging by the dough.
- Cut the finished pizza into 4 pieces along the borders marked by the hot pepper strips. Top with fresh basil leaves.
- Serve the homemade assorted pizza right away, while it's hot. Everyone grab your own piece!
