Salmon Pizza
I read somewhere that in developed countries several million documents are ruined every year, simply because someone “accidentally” put a slice of pizza on them. We have a similar problem, though of a slightly different kind. Here people spill coffee or beer on their papers. I once knew a programmer who managed to spill condensed milk over his keyboard and some important documents. He is probably the champion.
However much dietitians write about the harm of pizza, it is hard to agree with them. Just think about it: plenty of vitamins E, A and K, olive oil with its unsaturated fatty acids that lower cholesterol. Completely natural ingredients in the topping, good flour for the dough, herbs, vegetables. And, by the way, almost nothing has to be fried or baked beforehand.
Looking through classic Italian pizza recipes, I was a little surprised at how rarely fish is used as a topping. And fish is a source of those very unsaturated fatty acids that, like olive oil, are good for the body.
There are versions with seafood pizza, mussel pizza, tuna pizza and tomatoes. The recipes are very good and the pizza turns out exceptionally tasty. Still, the bulk of Italian recipes are vegetables, poultry and sausage.
Here is my recipe for an excellent and very tasty pizza with salmon, with a minimum of ingredients and a minimum of work. A simple topping of mozzarella, smoked salmon and homemade tomato sauce.
Salmon pizza is a type of fish pizza with tomatoes, cheese and herbs. An easy recipe for a tasty homemade pizza.
Ingredients
1 pizza, 34 cm
- Pizza dough 400 g
- Smoked salmon 100 g
- Mozzarella 100 g
- Homemade tomato sauce 3 tbsp
- Parmesan (grated) 2 tbsp
(14 g) - Green onions 3–5
- Chopped mixed herbs (basil, parsley, dill) 2 tbsp
(8 g) - Oregano to taste
- Vegetable oil for greasing the pan
Step-by-step recipe
Dough and sauce
Salmon pizza is especially good on a soft, fairly fluffy dough.
Make a yeast-free or yeast dough. We use pizza dough made by a simple recipe. The pizza dough recipe is easy to repeat, and the dough turns out just as it should.
Once the dough has risen, knead it briefly and stretch it onto a pizza pan greased with vegetable oil.
For a soft, fluffy crust, cover the dough with a towel and let it rest in a warm place for 15–30 mins. If you prefer a thin, slightly crisp crust, you can add the toppings right away.
Spread the dough with homemade tomato sauce.
If you did not manage to make the sauce in summer, you can always make it from 1–2 ripe tomatoes. Simmer the tomato pulp with spices to the thickness you like and use it to coat the dough.
Topping
Prepare all the topping ingredients. Set aside a little salmon and green onion for decoration.
Chop the green onion tops.
Chop all the herbs as finely as you can.
Slice the salmon thinly into small pieces. Do not cut the fish too large, or it will be hard to bite through.
Take the mozzarella out of its liquid and grate it.
Spread half of the grated mozzarella over the sauce. Sprinkle with 1–2 pinches of dried oregano.
Sprinkle the green onion and chopped herbs evenly over the mozzarella.
Arrange the slices of smoked salmon.
Sprinkle the remaining mozzarella over the fish, trying not to cover it completely.
Also sprinkle the pizza with finely grated Parmesan, putting most of it along the edge.
Baking
Preheat the oven to 180–190°C.
Let the pizza rest for 10 mins so the dough rises a little and the salmon pizza turns out soft.
Put the salmon pizza into the well-heated oven. Baking usually takes about 20 mins.
After 15–17 mins, check how done the dough is by lifting the edge with a knife. As soon as the underside is golden, the salmon pizza is ready.
Take the pizza out of the oven. Arrange the reserved slices of fish and the green onion on top.
Cut with a pizza cutter into 6–8 pieces.
Serve the salmon pizza hot, without waiting for it to cool. If you like, scatter a few fresh basil leaves over the finished pizza.

To Get It Right
Which fish to use
Smoked salmon. Other cold-smoked or lightly salted red fish, such as trout, will also work. Slice it thinly into small pieces so the fish is easy to bite.
Dough
Salmon pizza is best on a soft, fluffy yeast dough. If you have no time to wait for it to rise, use pizza dough without yeast.
Tomato sauce
Best of all is homemade tomato saucemade in summer. You need just 3 tbsp: the layer of sauce is thin, so the dough does not get soggy.
Other fish pizzas
- white pizza with smoked salmon, with no tomato sauce;
- fish pizza (with sardines);
- shrimp pizza and mussel pizza.

Can I make salmon pizza with a creamy sauce?
Yes. Replace the tomato sauce with béchamel or even plain thick sour cream, and you get a white pizza. This is how I make my white pizza with smoked salmon.
Which cheese goes well with salmon pizza?
This recipe uses mozzarella and a little Parmesan along the edge. If you like salmon with cream cheese (as in Philadelphia rolls), spread a few spoonfuls of cream cheese over the hot finished pizza together with the remaining fish slices.
Can I use fresh salmon instead of smoked?
Yes, if you slice it very thin: in 20 minutes in the oven thin slices have time to cook through. Salt the fish lightly, and do not decorate the finished pizza with raw fish.
What do you put on a fish pizza?
Here salmon comes with mozzarella, green onion, mixed herbs (basil, parsley, dill), oregano and Parmesan, over a tomato sauce base. Fish also goes well with seafood: there is seafood pizza and tuna pizza.
How do I keep salmon from drying out in the oven?
Cover the fish with mozzarella, but not completely, and don’t bake some of the slices at all: lay them on the hot pizza right after it comes out of the oven.
