Melitzanosalata — Greek Roasted Eggplant Dip with Garlic and Herbs

Melitzanosalata — Greek Roasted Eggplant Dip with Garlic and Herbs

Roasted eggplant with all kinds of additions is a signature of Eastern and Mediterranean cuisines. It's amazing how much imagination goes into eggplant dishes. Just eggplant with tomatoes alone can be made in hundreds of ways.

“The East is a delicate matter,” as the idol of those who were teenagers 30 years ago used to say. For centuries Eastern sages and poets shaped culture and science, Eastern women were considered the most mysterious, and Eastern tales the longest and most beautiful. Eastern cuisine was, and still is, considered the most exotic.

Over the centuries Eastern cooking has left a noticeable mark on the cuisines of Europe. Eggplant is rightly considered one of the most beloved vegetables in the kitchens of the East and the Mediterranean. It's amazing how popular eggplant is and how many varied and delicious dishes you can make from it. There is the famous, swoon-inducing imam bayildi with its tomato filling.

In Greece, traditional ouzo (Ούζο), an anise spirit, usually comes with a spread of appetizers, and melitzanosalata — eggplant with herbs and garlic — is almost always among them.

In season, eggplants are sold everywhere and are inexpensive, and eggplant appetizers always come in handy. As one wise man says, you just have to eat your fill of them while they're in season. And he's right: eggplant caviar is always the hit of the season, and the store-bought kind never lives up to expectations. Only in summer and autumn can you make proper roasted eggplant, while the seeds haven't formed yet and the flesh is pale and tender.

Ingredients

2 servings

  • Eggplants 3
  • Olive oil 50 ml
  • Parsley and cilantro 0.5 bunch
  • Lemon to taste
  • Onion 1
  • Garlic 2-3 cloves
  • Black olives 7-8
  • Salt to taste

Step-by-step recipe

  1. Use the youngest eggplants, with no visible formed seeds. Otherwise you'll have a long, tedious job removing the seeds. Wash the eggplants, wipe them dry, and prick the skin with a fork in many places. Lightly brush the eggplants with olive oil and bake them in the oven until soft.

    Vegetables for the appetizer.
  2. Once the eggplants are baked and cooled, peel them. Or do it the other way around: simply cut the roasted eggplants in half and scoop all the flesh out of the baked skin with a spoon — it's much faster and easier.

    Roasting the eggplants.
  3. Peel the onion and garlic. Pick all the leaves off the cilantro and parsley.
  4. Chop the onion, garlic and herbs any way you like. A blender makes this very easy. You should get a mushy mixture with some larger pieces. That said, with a bit of skill you can do it very well with a knife.

Chopping the onion, garlic and parsley.
  5. Drizzle the eggplant flesh with 1 tsp of lemon juice, salt it, and mash it with a fork into a purée or chop it very finely. Mix the olive oil with 1 tsp of lemon juice and whisk thoroughly with a fork.

    Peeling the eggplants.
  6. Put the chopped eggplant and the herbs with garlic into a bowl. Pour the olive oil dressing over everything and mix.

  7. If you like, add more salt and lemon to the roasted eggplant — purely to taste.

  8. Transfer the melitzanosalata with herbs and garlic to a suitable small bowl or a small plate. Garnish with parsley and black olives.

  9. Melitzanosalata, eggplant with herbs and garlic, is an excellent appetizer that goes very well with an aperitif, and many people simply love spreading it on fresh bread.
