Anchovy Pizza with Capers, Mozzarella and Tomato Sauce

Anchovy pizza is a little exotic but incredibly tasty, made from a fairly loose recipe that needs no serious preparation. As a rule, such a pizza includes mozzarella, tomatoes and capers, less often olives, and almost always fresh basil leaves are scattered over it just before serving.

Homemade anchovy pizza is similar to the well-known Sicilian pizza, which is made on a fluffy dough with sauce and anchovies, with pecorino as the cheese. Sfinciuni is considered the classic. Its distinguishing feature is that it is usually square, and in the US it is called “tomato pie”, because the sauce is often spread on top of the toppings.

By and large, any pizza is an open pie. The toppings are spread over a flatbread of dough that is round, square, or sometimes quite fanciful. Pizza is baked in an oven, and in the classic version in a wood-fired “Pompeian” oven. It is one of the most popular dishes in the world, a favorite food of programmers, office workers and mine. Often pizza is a perfect piece of culinary art, and it is hard to call it fast food.

Even in “famous” pizzas the toppings vary, but it is customary to single out the “classic” versions. Pizza marinara has a topping of tomato sauce, garlic, olive oil and oregano, and everything else is a secondary addition. This pizza is quite often confused with the pizza frutti di mare — the seafood one. Anchovy pizza is often presented as Pizza Napolitana. The toppings are close, but a true Napoletana is made only in a wood-fired oven. If you are in Naples, look around and find the sign forno a legna on a pizzeria. That is what you need.

A good anchovy pizza is easy to make. Besides anchovy fillets, the topping should include mozzarella, a sauce of fresh tomatoes, capers, dried oregano and Parmesan. Everything else is up to your taste and inspiration.

Anchovies are fairly rare in our stores, but you can almost always buy a small jar of salted fillets in oil, which is enough for 2-3 pizzas. A few fillets can go into an olive tapenade appetizer, and the rest into the pizza.

Someone said that anchovy pizza is often made with khamsa. Strictly speaking, these are herring-like fish of the anchovy family, and the European anchovy is called khamsa. Sprats are often passed off as anchovies. But these fish differ in appearance, in taste, and in the way they are salted. They say anchovies are a sign of “high” cuisine. For my part, I will say this: you are cooking for yourself, so buy anchovies. After all, nobody makes herring with onion, or sprats with jacket potatoes, with anchovies.

A step-by-step recipe for tasty homemade pizza with anchovies and capers, with a ripe tomato sauce and mozzarella.

Ingredients

36 cm pizza

  • For the base
  • Yeast pizza dough 400 g (from 2 cups of flour)
  • Olive oil for greasing the pan
  • For the sauce
  • Ripe tomatoes 2-3
  • Oil from the anchovy jar 1 tbsp
  • Salt, hot pepper, Mediterranean herbs to taste
  • For the topping
  • Anchovy fillets in oil 5-6 fillets
  • Mozzarella 150 g
  • Onion (preferably white) 1
  • White wine vinegar for pickling the onion
  • Capers 1 tbsp
    (10 g)
  • Parmesan 50 g
  • Dried oregano 1-2 pinches
  • Fresh basil 2-3 sprigs

Step-by-step recipe

Preparing the ingredients and dough

  1. Get a few very ripe tomatoes, red or pink. You need a small onion, preferably white so it does not color the topping.

  2. Take the anchovy fillets out of the jar and pour off a little of the oil too. You will need it for the sauce.

  3. Put a few sprigs of fresh basil for serving into cold water ahead of time.

  4. Take the fresh mozzarella (small balls or one large one, it does not matter) out of its liquid.

  5. Rinse the capers. If they are very salty, soak them in water and then squeeze them dry.

    Anchovies.
  6. Make a yeast pizza dough from 2 cups of flour (260 g) ahead of time. I have already described a simple dough recipe, and it turns out well every time.

  7. After the dough rises, knead it down once more and wait for it to rise again.

  8. Grease the pan with a little olive oil and stretch the dough by hand into a round to fit the pan.

If you want the anchovy pizza on a thin, crisp crust, you can add the toppings right away. If you prefer a fluffy, soft crust, cover the dough in the pan with a towel and let it rise for 30 minutes.

  9. While the dough is rising, peel the onion and slice it into rings as thin as possible.

  10. Put the onion in a small bowl and cover it with white wine vinegar. Leave the onion to marinate while the dough rises.

  11. Then rinse the onion carefully under cold water to remove the vinegar, trying not to break the rings too much.

    Pickled onion.

Tomato sauce

  1. Cut the ripe tomatoes into four pieces and remove the stem end and the white parts. The skin and seeds can stay.

  2. Blend the tomatoes and rub the purée through a sieve or mesh strainer. Pour the purée into a container and discard the seeds and skin left in the sieve.

    Tomato purée.
  3. Pour a little oil from the anchovy jar into a saucepan and add all the tomato purée.

The anchovy oil gives the sauce a unique aroma. It is worth saying that the taste of anchovies appears in many sauces, for example Worcestershire sauce, an ingredient in Caesar salad. And the anchovy pizza will taste much better too.

  4. Salt the tomato lightly and add a pinch of hot pepper and dried aromatic herbs.

    Tomato with spices.
  5. Simmer the tomato sauce over medium heat without covering the saucepan. The boiling sauce must be stirred because it burns easily.

The tomato sauce for pizza must become thick. You can tell it is ready when you drag a spatula across the bottom of the saucepan and the sauce does not close over it right away, but a few seconds later.

Assembling the toppings

  1. In the Sicilian pizza made in the US, the tomato sauce is often spread over all the toppings, last. I wanted the anchovies to be visible in the topping, as in the original Sicilian orange salad, where the fish fillet is added right before serving.

  2. So right from the start, brush the dough in the pan with tomato sauce.

  3. Over the tomato sauce, arrange the pickled onion, squeezed dry of water.

  4. Slice the mozzarella thinly and spread it evenly over the sauce. There is no need to make a solid layer without gaps. If you use mozzarella in small balls, you can cut them in half or into four pieces and arrange them. The pieces will melt and spread while baking.

  5. Cut the anchovy fillets in half lengthwise or into thin strips. Usually anchovies are cleaned of large bones, but it is worth checking. Only the fillet should remain, with no noticeable bones such as backbones and fins.

  6. Arrange the fillet strips over the pizza radially, closer to the edge of the dough.

    Pieces of anchovy fillet.
  7. Scatter the capers evenly over the pizza. Pizza with anchovies and capers is often found in pizzerias; it is a fairly common combination of toppings.

  8. Sprinkle the pizza with 1-2 pinches of dried oregano.

    Capers and oregano.
  9. Grate a piece of Parmesan. You can use pecorino or Grana Padano.

  10. Sprinkle the anchovy pizza generously with Parmesan along the edge, and less in the center. Let the toppings show in the middle.

    Grated Parmesan.

Baking and serving

  1. Preheat the oven to 200°C.

  2. Put the pan with the pizza into the hot oven. Anchovy pizza usually bakes for about 20 minutes. During this time the mozzarella melts, and the dough is done and starts to turn golden.

Check that the dough is done by lifting its edge. Really, the pizza is done when the dough is done. If you like, you can dry the dough and toppings out a bit with extra time. Do not be afraid: in a few extra minutes the toppings and dough will not burn.

  3. Take the finished pizza out of the oven and move it to a wooden board, on which pizzas are often served at the table.

  4. Cut the pizza into 6-8 slices with a rolling pizza cutter.

  5. Put a few green basil leaves on each slice.

    Sliced pizza.
  6. Anchovy pizza is served hot. As a rule, any pizza is eaten with the hands. Still, most pizzerias bring plates, forks and knives, as well as mayonnaise and ketchup…

Anchovy pizza goes great with tomato juice or a light cold wine. It also goes well enough with beer. Although even on its own it is a complete, self-sufficient dish.

To Get It Right

One jar is enough for 2-3 pizzas

Anchovies are rare in stores, but there is almost always a small jar of salted fillets in oil. Use the oil in the tomato sauce, and the few extra fillets for an olive tapenade appetizer.

To avoid oversalting

Anchovies, capers and Parmesan are salty already. Salt the tomato sauce only very lightly, and be sure to soak very salty capers in water and squeeze them dry.

If you do not have ripe tomatoes

Canned tomatoes in their own juice will do instead of fresh ones: blend them in the same way, rub them through a sieve and cook down until thick.

Sauce over the toppings

You can do it like the Sicilian pizza made in the US: put the onion, mozzarella and anchovies right on the dough and the thick tomato sauce last, on top.

Questions and answers

What is anchovy pizza called?

It is often called Pizza Napolitana. The toppings are close, but a true Napoletana is made only in a wood-fired oven. It is also similar to Sicilian Sfinciuni, a square pizza on a fluffy dough with sauce, anchovies and pecorino, which is called “tomato pie” in the US.

Can I replace anchovies with sprats?

Better not to: sprats are often passed off as anchovies, but these fish differ in appearance, in taste, and in the way they are salted. If you are cooking for yourself, buy anchovies.

How long do you bake pizza in the oven at 200°C?

About 20 minutes. Go by the dough: lift the edge, and if it has browned, the pizza is done. A few extra minutes will not hurt it.

How do you make the pizza dough thin?

Stretch the dough to fit the pan and add the toppings right away, without letting it rise again, and the pizza will come out thin and crisp. For a fluffy base, cover the dough in the pan with a towel and leave it to rise for 30 minutes.

Can I make anchovy pizza without capers?

Yes, but anchovies with capers are the most common combination and are often made in pizzerias. You can use olives instead of capers.
