Grilled Chicken Chop with Herbs: Easy Recipe
A grilled chicken chop is one of the tastiest chicken dishes. Just like a juicy pork chop cooked on the grill.
I never quite understood why you'd pound chicken fillet, which cooks in a few minutes anyway. But the word “chop” does imply that the meat gets pounded
In the Balkans they grill herbed chicken fillet chops beautifully. It's a simple dish that needs very few ingredients and almost no prep. It's good enough for a quick breakfast, too.
In Bulgaria this dish is called “Pürzhola na skara”. It can be pork, beef or chicken.
A chicken chop is very easy to make and goes with any side dish.
Ingredients
2 servings
- Chicken fillet 2
- Olive oil 1 tbsp
- Salt, dried herb mix (oregano, basil, savory), curry powder to taste
Step-by-step recipe
- Let the fillet thaw completely. With a sharp knife, cut the fillet lengthwise along the side so it opens like a book; this makes the chop larger. Gently, without pressing hard, pound the fillet with a meat mallet on both sides. The chicken chop should become tender and 10-12 mm thick.
- Rub the fillet with salt and dried herbs. Sprinkle with a little curry powder (a mild one!). Let the fillet rest while the grill heats up.
- Heat the grill. Use whatever you have: light a charcoal grill, switch on an electric grill, or use a grill pan. Brush the grates lightly with olive oil so the meat doesn't stick while cooking.
- Pat the fillet dry with a paper towel and brush both sides with olive oil, just a little. Place the chicken chop on the hot grill.
- Grill the chicken chop on one side. As soon as the underside turns golden, flip it right away.
- Grill the chicken chop until done. Flip it only once; for a crosshatch grill pattern, simply turn the fillet 90 degrees. A chicken chop usually takes 4-5 minutes per side, which is plenty. Chicken cooks very fast.
- Transfer the chicken chop to a plate.
- Serve the chicken chop with fresh vegetables: bell pepper, tomato, cucumber. Or simply garnish with sprigs of parsley and basil. A pickle goes well too. A chicken fillet chop needs no sauces, and certainly no ketchup. I highly recommend squeezing lemon juice over it on the plate; chicken goes very well with lemon.
