
Fish Soup with Shrimp and Salmon – Step-by-Step Recipe
Many people, in fact the vast majority, barely notice the difference between ukha and fish soup. They are far from the same thing. Ukha is considered a dish of Ukrainian cuisine, one of the many kinds of first courses. The word ukha itself most likely comes from the ancient word juse, meaning a broth or decoction. The word “yushka” is still used in modern Ukrainian. Other European languages have similar-sounding words too: juse (a meat soup) in Old Prussian, ius (broth, juice) in Latin, jucha (soup) in Slovenian and jicha (sauce) in Czech.
But only in this cuisine is ukha a broth made from fish. It is perhaps one of the oldest dishes of Kyivan Rus'. You often come across more specific names, too: ukha with rooster, mixed-fish ukha, ukha with pearl barley and so on.
Almost any fish works for fish soup. The essence of any soup, fish soup included, is the stock it is cooked on. Any fish will do, sea or river, and so will seafood. The stock is often made not from prized fish but from “trash fish” – small, unmarketable fish – or even from fish scraps (bones, fins, heads).
In some recipes the stock is made not from scraps but from proper fish, most often salmon or trout, and then the soup is cooked on that stock with seafood, vegetables and herbs added.
Today we are making fish soup with shrimp. The base of the soup is a stock made from pieces of salmon or trout; we will leave the fish in the soup and add shrimp for variety. Essentially, the base is a salmon ukha.
Ingredients

- Salmon 200 g
- Shrimp (medium) 30
- Tomato 1
- Onion 2
- Carrot 1
- Dill, basil 2-3 sprigs each
- Cream 100 ml
- Butter 50 g
- Spices: salt, black pepper, ginger, nutmeg, aromatic herbs to taste
Step-by-step recipe
- We will make this shrimp soup on fish stock as two processes running in parallel.
- Peel the onions and carrot. Chop the onions not too finely and fry in butter until soft.
- Finely grate the peeled carrot and add it to the fried onion. Season with salt and pepper and add a pinch each of ground ginger and nutmeg. Simmer, covered, over low heat for about 15 minutes.
- Meanwhile, bring 1 l of water to a boil and poach the salmon pieces in it, 1-2 per serving. Do not add spices or salt to the stock. It is best not to stir the stock so the fish pieces stay whole and do not fall apart. Carefully lift the cooked fish pieces out of the stock and set them aside.
- Add the finely chopped flesh of a tomato, without skin and seeds, to the stewed onion and carrot. Scald the tomato with boiling water beforehand and peel it.
- Simmer for another 5 minutes. Add half a cup of cream. Once the cream comes to a boil, the soup base is ready.
- Add finely chopped dill and basil to the boiling salmon stock, and once it boils again, add the peeled shrimp.
- Then add the stewed vegetables to the salmon stock, bring to a boil and simmer the soup over low heat for 10 minutes.
- If needed, season the fish soup with salt and pepper to taste.
- Let the soup simmer for a few more minutes.
- Place pieces of poached salmon and shrimp in each bowl and ladle in the fish soup. Serve hot.
