Dried fruits and berries, whole or in pieces, with a low moisture content, are known to everyone as dried fruit.

Usually, fresh fruits and berries are dried the natural way, in the sun or under a canopy. Lately, though, industrial drying has been pushing out the traditional methods.

First of all, dried fruit is valued for its huge vitamin content and fairly high calorie count. It doesn’t need refrigeration, and for fairly long storage it is simply poured into sacks.

Dried fruit is not only a source of vitamins or a treat. Since childhood, for me dried fruit has meant, first of all, compote, or as we say in Ukrainian, uzvar. Besides that, dried fruit goes into baking, various dry breakfast mixes and muesli. In case you don’t know, raisins are the most typical and widespread dried fruit.

Whipped cream with prunes and nuts is probably my favorite dessert. And homemade bigos is impossible without prunes.

Added to a stewed or fried dish, prunes bring a distinct smoky note. Chicken with prunes, even cooked at home in an ordinary frying pan, tastes like food cooked over a campfire.

Ingredients

2 servings

  • For the chicken
  • Chicken thigh fillet (or drumsticks) 4
  • Prunes 100 g
  • Onion 1
  • Vegetable oil 3 tbsp
  • Salt, ground black pepper, ground paprika, dried herbs, hot pepper to taste
  • Sugar a pinch, optional
  • For serving
  • Baked potatoes 2
  • Parsley 2-3 sprigs

Step-by-step recipe

Preparing the chicken

  1. Chicken with prunes works equally well on the stove or in a cauldron. For a family you don’t need a whole chicken, just several identical parts, such as thighs or drumsticks.

  2. Cut the chicken into medium pieces, so that each one is easy to eat in one bite. If you are using a whole chicken, remove the skin and cut off all the meat.

  3. Salt the chicken pieces, sprinkle with pepper and dried aromatic herbs (oregano, basil, etc.), and add a pinch of sweet red paprika. Leave the chicken for 10 minutes.

  2. Fry the chicken pieces, turning them, until browned and half-cooked, about 8 minutes.

  3. Peel the onion and cut it into thick strips.

  4. Add the onion to the chicken and fry, stirring constantly, until the onion is soft, about 5 minutes. Keep the heat above medium and don’t cover the pan.

  5. Add salt, sweet red paprika and black pepper to taste to the chicken and onion.

Stewing with the prunes

  1. Wash the pitted prunes. If they are large, you can cut them.

  2. Add the prunes to the chicken and onion and keep frying for 5 minutes.

  3. Turn the heat down to the minimum, cover and stew the chicken with prunes for 10 minutes, until the meat is tender.

If the prunes are not sweet and have a noticeable tartness, add a pinch of sugar to the dish.

    Adding the washed prunes.

Serving

  1. Chicken with prunes goes very well with baked potatoes. If you can, bake them in the embers.

  2. Put the baked potatoes on plates, sprinkle with finely chopped parsley and coarsely ground red pepper.

  3. Add the chicken with prunes and onion. Serve it hot, right away, before the wonderful aroma escapes.
