Zucchini Rolls with Chicken Breast and Blue Cheese
Ingredients
6-8 servings
- Zucchini 2
- Chicken breast 1
- Blue cheese 50 g
- Dill, parsley 3-4 sprigs
- Olive oil 1-2 tbsp
- Balsamic vinegar 2-3 drops
- Salt, ground black pepper to taste
Step-by-step recipe
Frying the zucchini
Zucchini rolls are made from young zucchini.
Wash the zucchini and cut off the ends. If the zucchini is young, there is no need to peel it.
Cut the zucchini lengthwise into very thin slices, no more than 4-5 mm thick. One medium zucchini gives 5-6 slices. The outer slices are not used.
Salt the zucchini slices and leave them for 10 mins.
Place the zucchini on a heated skillet.
Fry the zucchini in olive oil until soft and nicely browned.
Lay the fried zucchini on a plate and let it cool.
Chicken and cheese filling
Blue cheese: Roquefort, Gorgonzola, Danablu, Dorblu or any other. Mash it with a fork into a smooth paste, or grate it on a fine grater if it is firm.
Pound the chicken breast lightly so the meat is no more than 15 mm thick.
Season the chicken breast with salt and black pepper. Let the meat sit for 10 mins.
Place the prepared chicken on a heated grill pan, lightly greased with vegetable oil. Cook the chicken until done on both sides. Frying the chicken usually takes about 10 mins in total.
Chop the cooked chicken breast with a knife into small pieces of any shape, about the size you would cut vegetables for vinaigrette salad.
In a bowl, mix the chopped chicken breast with the blue cheese. Add 1 tbsp finely chopped herbs (4 g). Mix thoroughly. If the mixture is a little dry, you can add 0.5 tsp olive oil, but no more.
Roll up and serve
Put 1 tsp of the fried chicken and cheese mixture on a slice of fried zucchini and roll it up.
In principle the zucchini rolls are ready, but before serving you can grill them briefly on a grill rack, on a charcoal grill or barbecue, which is very handy for a picnic.
The appetizer can be served warm or chilled, as you prefer. It turns out especially well if you drizzle the rolls with a little olive oil mixed with 2-3 drops of balsamic vinegar and then chill them well.
The size of these zucchini rolls is ideal for an appetizer, one bite and it’s gone, as they say. They are easy to make and very tasty.

Which zucchini to choose
Young ones with thin skin and small seeds: they don’t need peeling, and the slices roll up easily. Rolls can be made the same way from courgettes.
Keeping the rolls from unrolling
Roll up the slices once they have cooled, as hot ones tear. If you are going to grill the rolls afterwards, secure each one with a toothpick or skewer.
If you have no blue cheese
Brynza or feta mashed with a fork will do. For fans of rolls with cheese and garlic, use grated hard cheese with a crushed garlic clove and a spoonful of sour cream.
Storage
You can roll them ahead of time and keep them in the fridge under cling film for up to a day. It is better to add the oil and balsamic vinegar closer to serving.

In this recipe it is fried chicken breast with blue cheese and herbs, 1 tsp per slice. But you can wrap almost anything in zucchini.
Can you make zucchini rolls with meat?
Yes. Instead of chicken, fried or baked pork, veal or ham will work, chopped just as finely and mixed with the cheese.

One medium zucchini gives 5-6 slices, so two give 10-12 rolls. That is 6-8 servings of the appetizer.

How are zucchini rolls different from a zucchini roulade?
A zucchini roulade is a sheet of grated zucchini with egg that is baked and rolled up with a filling. Here, each fried zucchini slice is a separate little one-bite roll.
