Marinara Sauce for Pizza
Ingredients
34 cm pizza
- Pizza dough 400 g
- Ripest tomatoes 4-5
- Garlic 3-4 cloves
- Olive oil 3-4 tbsp
- Parmesan (optional) 30 g
- Black olives (optional) 8-10
- Fresh basil 2-3 sprigs
- Sugar 1 tsp (5 g)
- Salt, oregano, dried herbs to taste
Step-by-step recipe
Dough
Make the dough. Pizza dough is made the usual way. We have been making a yeast pizza dough from a very simple recipe for a long time and recommend it to everyone. What is special about this dough is that you can make it anything from thin and crisp as a chip to thick and fluffy, as you like.
Marinara sauce
Make the sauce. The tomatoes must be fully ripe. Scald them, peel off the skin and remove the seeds. Mash the flesh to a purée, add salt, 1 tsp sugar (5 g) and 1 tbsp olive oil.
The sauce is raw, so there is no need to simmer it. If liquid collects in the purée, drain it off. Marinara pizza should be dry rather than juicy.
Assembling and baking
Assemble the pizza. Spread the purée over the prepared dough on the pan. Then scatter thin slices of garlic and black olives, halved or whole. Sprinkle with dried oregano and dried herbs, then with grated Parmesan.
Put it in an oven preheated to 200°C. Marinara bakes for up to 20 minutes, until the edges of the dough are browned.
Serving
Garnish the finished pizza only with fresh basil leaves. Cut the pizza into 6-8 pieces.
Marinara pizza is served hot. Then again, cold pizza is always good.
