Cabbage, Cucumber and Tomato Salad - Fresh Vitamin Salad

Cabbage, Cucumber and Tomato Salad - Fresh Vitamin Salad

Ever since early childhood, and I don't know why, as soon as summer came and fresh vegetables arrived straight from the garden, my favorite meal was new potatoes with sour cream, dill and garlic, plus a big bowl of vegetable salad. A salad of cabbage, cucumbers, tomatoes and fresh herbs.

Salad is almost the most important thing. I'll agree, there is nothing in a salad like this that makes it special. Maybe. But experience shows that the vast majority of people simply chop the vegetables, salt them and, at best, dress them with vegetable oil. At worst, as most do, they pour a thick layer of mayonnaise over it and enjoy… the taste of mayonnaise. But then, there's no accounting for taste…

Fresh vegetables are something people lacked for centuries. Travelers, sailors, polar explorers and many others often suffered from a lack of vitamins, to the point of scurvy, a dangerous disease. As early as the 8th century people realized that scurvy was caused by diet. Knowing nothing about vitamins, they understood that if you eat lemons (an excellent source of vitamins), scurvy doesn't happen. And only at the beginning of the last century was a compound from the amine group first isolated and named “Vitamine,” from the Latin vita, “life.” Although the most important vitamin, C, is not an amine, but that's not the point. The point is that without a dozen and a half of these substances a healthy life is impossible. Unlike plants and animals, the human body does not produce vitamins itself, so a vitamin-rich diet is extremely important for us.

A vegetable salad with cabbage, especially with young vegetables added, is an unbeatable source of vitamins.

Before running to the pharmacy for chemical vitamins, go to the market and buy fresh vegetables, just picked from the garden. Come home and make a salad in which, I assure you, the vitamins are positively swarming!

Cabbage salad

Ingredients

2 servings

  • Cabbage 1 head
  • Tomato 2
  • Cucumber 2-3
  • Carrot 1 head
  • Green onion (leaves) 1 head
  • Dill 3-4 sprigs
  • Vegetable oil 2-3 tbsp
  • Lemon juice to taste
  • Salt to taste

Step-by-step recipe

  1. Young cabbage is slightly greenish, crisp and very sweet. You can eat it just as it is. In fact, that's what we did as kids. Getting a fresh cabbage stalk was a goal in itself, and we were especially happy when cabbage was being fermented in barrels for winter in the village. A fresh cabbage stalk is great, anyone will tell you. Soon young cabbage becomes quite tough, and eating it raw is no longer so pleasant. So eat your fill to last the whole year.

    Vegetables.
  2. The cabbage must be shredded very finely. It's best to do this with a large, sharp knife. That said, there are plenty of manual and electric shredders.
  3. Put the shredded cabbage in a deep bowl, salt to taste and squeeze in the lemon juice. When I was little, lemons were a rarity in summer. So at home we always added citric acid on the tip of a knife, or even table vinegar. But times have changed, and there are always lemons. If the cabbage has already become a bit coarse, squeeze it lightly with your hands. Just a little, so that it releases some juice. But if it's very young, simply toss it. Let the cabbage stand and in 5 minutes it will release juice. And one more thing: many people like to add 0.5 tsp of sugar to the cabbage. Give it a try.

Salt the shredded cabbage to taste and squeeze in the lemon juice.
  4. While the cabbage rests, wash the other vegetables and peel the carrot. Chop the green onion leaves finely. Cut the carrot lengthwise into 4 pieces first, then slice into thin plates. Dice the tomato. Cucumbers can be peeled or left with the skin on, especially if they are nice and green. Trim the ends off the cucumbers and halve them lengthwise. Slice fairly thin. For the dill, use only the sprigs without coarse stems, finely chopped.

Chop all the vegetables and mix them with the cabbage.
  5. Add all the chopped vegetables to the shredded cabbage and mix. Pour the vegetable oil over the vegetables.

Dress the salad with vegetable oil.
  6. Serve the salad on plates.
