Squid Pizza
There is hardly anything they don’t bake pizza with in Italy. And not only in Italy, but all over the world. Pizza long ago went from a national Italian dish to an international one.
Every country, following its local and national traditions, adds something of its own to the classic Italian versions – something new and, as a rule, unique.
Classic Italian seafood pizza, is made with a topping of boiled or fried seafood. Usually that means shrimp, mussels, spiny lobster, cuttlefish, squid. The classic Italian mussel pizza uses only one kind of seafood, mussels, with garlic, olive oil and parsley.
Pizza – shrimp pizza is made only with peeled shrimp. In the same way, squid pizza (Pizza con calamari) is made only with squid rings.
I have already given a recipe for fried squid, the best snack with ice-cold beer. The important thing is not to overcook it, or the tender squid meat turns rubbery.
Squid is an excellent topping for pizza, and pizzerias use it not only in Italy but all over the world. Pizza with squid, mozzarella and tomato is easy to make. And how to make crab salad I will tell you another time.
Ingredients
34 cm pizza
- Pizza dough 400 g
- Squid rings 200 g
- Tomato sauce 3 tbsp
- Olives (green) 5-6
- Parmesan 50 g
- Mozzarella 150 g
- Green onion (stalks) 5-6
- Salt, oregano, black pepper, lemon juice to taste
Step-by-step recipe
Make the dough. I have given the pizza dough recipe many times – “Pizza dough“. Lightly grease the pan with olive oil and lay the dough on it. Be sure to prick the dough with a fork in several places.
Make a tomato sauce with herbs, which the Italians call salsa di pomodoro – a wonderful substitute for the ketchup our compatriots love so much. Frozen squid works fine. But if you can buy whole bodies, choose not the largest ones. They are usually sold frozen, 15-20 cm long. That is just right! Only the squid body is used for this dish. The other parts, the tentacles and the tail, are not used. I have already written how to prepare squid bodies in the recipe for battered squid.
Finely chop the green onion stalks. Cut the mozzarella into thin slices with a knife or grate it on the coarsest grater. Cut the green olives into rings.
Spread tomato sauce over the dough on the pan, carefully and leaving no gaps.
Arrange pieces of mozzarella on the pizza. The mozzarella doesn’t have to cover the whole pizza. Then add the green olive rings.
Sprinkle the pizza with dried oregano. Cut some of the squid rings into small pieces, leaving 3-4 for decoration. By the way, if you have shrimp in the fridge, add a few peeled tails, but not many, literally 10-12, and you can even chop them first.
Sprinkle the pizza with the chopped green onion.
Squid pizza is topped with grated Parmesan.
Now an important point. Squeeze the juice of a quarter of a lemon over the pizza, spreading it evenly. Lemon and seafood go together too well to ignore it, and the squid pizza will have a light tartness.
Put the pizza in an oven preheated to 200°C. Squid pizza bakes for up to 20 minutes.
Cut the finished pizza into 6-8 slices. Serve right away, while the squid pizza is hot.
And one more thing: you can fry the squid first. It’s delicious.
