
Baked Pumpkin with Walnuts, Honey and Prunes: Autumn Dessert Recipe
In autumn, pumpkin almost always meant pumpkin porridge. At home it was cooked with millet or rice and fresh milk. Now and then, though rarely, the pumpkin was baked in the oven. Or there was pumpkin with nuts, a homemade autumn treat.
I'll admit I wasn't a big fan of the porridge, like any normal kid. Baked pumpkin with honey, though, was another story. Fried pumpkin with honey is very tasty too.
Edible varieties of field pumpkin (Latin Cucurbita pepo) are very easy to digest and are used both in baby food and in therapeutic diets. Pumpkin keeps for a very long time and is still around even in late spring. Remember the Cinderella fairy tale: gardens in bloom all around and huge pumpkins in the vegetable patch. Pure magic.
Besides its culinary virtues, pumpkin is also a material for decorative crafts: lamps, vessels for liquids and so on. In America there is Halloween (All Hallows' Eve, or All Saints' Eve), the eve of All Saints' Day. In the US it means mass scaring of the population and carving lanterns out of pumpkins. A fun holiday.
Actually, Halloween came from the Old World, from the ancient Celts, and by the way it is celebrated not only in the New World but also in France and Great Britain. In recent years this fashion has reached us too, but it is more about scaring the neighbors, as in “Trick or treat”.
Pumpkin dessert with nuts, honey and prunes, with a little lemon, is an amazing dish. It is somewhat like pumpkin porridge, but much more delicate. Another autumn pumpkin dessert is the one with berries and cinnamon.
Ingredients

- Pumpkin 0.5 kg
- Walnuts (shelled) 3-4 tbsp
- Prunes 100 g
- Honey 1-2 tbsp
- Butter 1 tbsp
- Vanilla, cinnamon, lemon to taste
Step-by-step recipe
- The hardest part is peeling the pumpkin, and it's no easy task: the rind is very tough. Carefully peel off all the rind with a sharp metal knife and cut off the stem. Don't try this with a ceramic knife, you'll simply break it. Cut the pumpkin lengthwise into 4 pieces, remove the seeds and scrape out the inside. Cut the pumpkin into cubes no larger than 3 cm.
- Split the walnut kernels into halves or quarters and toast them in a hot dry frying pan. Wash the prunes and cut them into large pieces.
- In a deep ovenproof dish, mix the pumpkin cubes, nuts and prunes. The dish must have a lid; a heat-resistant glass roaster is perfect. Add vanilla and cinnamon to taste. Squeeze lemon juice over the pumpkin, 1 tbsp is enough. Melt the butter, pour it over the pumpkin and nuts and mix again.
- Cover the dish with the lid and put it in an oven preheated to 180 °C. Let the pumpkin and nuts bake. Naturally, the pumpkin will release liquid. Once the liquid starts to boil, stew the pumpkin, nut and prune dessert for 20 mins. Then remove the lid and stew for another 15 mins.
- Pour natural honey over the pumpkin dessert and stir. I must say, the amount of honey is strictly a matter of taste. If you love sweets, go ahead and love them. That's a hint.
- The pumpkin dessert with nuts, honey and prunes is ready. While the pumpkin is hot, spoon it onto plates and sprinkle with lemon zest.
