Spaghetti with cheese makes a simple breakfast, a tasty lunch and a lovely dinner. Making pasta with cheese is even easier than freezing ice cubes. I remember that in my childhood, whenever my mom managed to buy decent spaghetti, we had it with cheese or spaghetti with mushrooms for breakfast, though that was rare.

Spaghetti is one of the most common types of pasta. There was a time when spaghetti was much longer, about half a meter. Today its length is standardized at 25 cm. Spaghetti is about 2 mm in diameter and is made from durum wheat flour. Its birthplace is Naples, and according to surviving documents the pasta's history goes back more than 500 years, while some sources suggest that similar dough products existed as early as the 13th century.

The most common sauce for spaghetti is tomato, and pasta with tomato sauce is the version you come across most often. It is worth saying that there are more than 10,000 sauces for spaghetti, not counting all kinds of additions other than sauce. For example, spaghetti with cheese is a simple dish of boiled high-quality spaghetti tossed with some kind of cheese. Since making a sauce takes time and is usually not that simple, grated Italian cheese with pasta makes cooking easier, especially in the morning when you are short on time.

The beauty of spaghetti with cheese is that boiling pasta couldn't be easier, and grating a piece of fragrant, slightly sharp Italian cheese is no trouble for anyone. Most of the time needed to make the dish goes into bringing the water to a boil, just as when cooking spaghetti with chicken.

One of the tastiest sauces for spaghetti is carbonara, made from eggs and fried bacon or guanciale, seasoned with pepper and Parmesan. This recipe is very popular in Lazio and Rome.

You can make spaghetti with cheese with any pasta, although I prefer long shapes: spaghetti, capellini, fettuccine and so on. Long pasta holds thin sauces less well, but it goes perfectly with various additions. For example, spaghetti with mushroomsmade with large pieces of porcini, or spaghetti with mussels, have very little liquid and more large chunks. Pasta seasoned with grated hard cheese mixes well with such additions, and spaghetti with cheese turns out simply superb.

  • Spaghetti 250 g
  • Hard cheese (Pecorino, Parmesan, Grana Padano) 50 g
  • Garlic 2-3 cloves
  • Olive oil 3 tbsp
  • Mixed herbs (basil, parsley, dill) 1 tbsp
  • Salt, black pepper to taste

Step-by-step recipe

  1. Spaghetti with cheese can be made with any aged Italian cheese. Pecorino, a sheep's milk cheese with a “grainy” texture and a pleasant aroma, works great. Or the famous Parmigiano Reggiano, Parmesan, a hard, “old” Italian cheese with a very pleasant, piquant flavor.

  2. A “simpler” cheese, Grana Padano, has also proven itself as an addition to pasta. It is cheaper than Parmesan, its production is not held to the strictest requirements and is not limited to the Emilia-Romagna region, which does not make it any less tasty. Grana Padano has a pronounced grainy texture (grana means “grain”) and a slightly sharp, piquant flavor. This cheese goes great with red wine, in salads and as an addition to spaghetti.
  3. To make the dish, remove the rind from the chosen hard cheese (by the way, it is usually edible and tasty), then grate the cheese finely. If you want a finer cheese for sprinkling, you can additionally pulse the grated cheese in a blender for literally 3-4 seconds. The cheese grains will be the size of coarse river sand.

  4. Pour 2-3 l of water into a pot and add salt at a rate of 5-7 g per 1 l of water. Bring the water to a boil and cook the spaghetti until done. The cooking time on the package guarantees al dente spaghetti. Never overcook the pasta.

  5. Heat olive oil in a frying pan and fry the garlic cloves, peeled and crushed with the flat of a knife. The garlic is only there to flavor the olive oil a little. Fry the garlic, stirring, until it starts to darken slightly. Then take the garlic out of the oil and discard it.

  6. Drain the cooked pasta in a colander. Transfer the spaghetti to the hot olive oil and mix well. Fry the spaghetti in the oil, stirring, for 4-5 mins over medium heat.

  7. Sprinkle the spaghetti with the grated cheese. Add a little very finely chopped mixed herbs (basil, dill, parsley), season with freshly ground black pepper, then mix.

  8. Divide the spaghetti among plates. Sprinkle with more hard cheese if you like. Spaghetti with cheese should be served right away: once it cools, the pasta becomes stiff and unappealing.
