In Mediterranean cooking, and Italian cooking above all, basil is the herb number one. Basil (also known as sweet basil, Genovese basil or St. Joseph’s wort) is an annual aromatic herb widely used in both cooking and folk medicine. It grows wild mostly in the warm countries of Europe, but people cultivate it in gardens all over the world. The Greek word “ozein” behind its botanical name means “to smell”. The leaves and stems are full of aromatic compounds, which give basil its taste and fragrance. That is why basil sauces turn out so good.

In Italian cuisine basil is the most important herb. The famous classic pesto, Pesto alla Genovese, is impossible without it. It is made with green basil grown around Genoa, spices, pine nuts, garlic, olive oil and Pecorino cheese.

Besides green basil, there are many other varieties, for example “opal” basil with purple leaves. The smell is very similar, but the color is a letdown. Or lemon basil, which I bought for the first time last year, and now I always check what I am buying so as not to repeat that mistake. Although basil is considered a spice worthy of kings, too much of it in a dish can overpower and kill every other aroma. Pedanius Dioscorides, the ancient Roman army physician, wrote more than 2,000 years ago that basil may weaken eyesight. Avicenna, on the other hand, recommended basil for medicinal purposes.

Basil tastes slightly bitter, with a sweetish note reminiscent of clove or nutmeg. It goes great with legumes, tomatoes and cabbage. You can also use it to flavor vinegar. Dried basil is used for table seasonings that replace black pepper.

Let’s make Italian cappelletti pasta with a sauce of basil, garlic and Parmesan.

Step-by-step recipe

Pasta

  1. To make the basil pasta beautiful and tasty, we will take unfilled cappelletti from the Emilia-Romagna region in the north of Italy.

    Ingredients: cappelletti pasta, basil, garlic, Parmesan, olive oil, ground black pepper, salt.

    First, it has a very ornate shape, so it holds the sauce perfectly. Second, cappelletti are compact, similar to dumplings, and convenient to serve in portions, one piece at a time.

To Get It Right

Which pasta to use

Cappelletti are good for their ornate shape: the sauce clings to every piece. Another shaped pasta or spaghetti will work instead.

How much basil

Half a bunch is enough for two servings. Basil is a spice worthy of kings, but too much of it can overpower and kill every other aroma.

Which basil

  • green is the best choice for the sauce;
  • “opal” basil with purple leaves smells very similar, but the color of the sauce is a letdown;
  • I once bought lemon basil, and now I always check the basil when buying so as not to repeat that mistake.

Salt for cooking

7 g of salt per 1 liter of water, and plenty of water so the pasta cooks freely. I do not add salt to the sauce separately: it has a lot of Parmesan.

Questions and answers

What is basil sauce called?

The best known is the classic pesto, Pesto alla Genovese: green basil from around Genoa, spices, pine nuts, garlic, olive oil and Pecorino cheese. The sauce in this recipe is not pesto: it has Parmesan and only 1 tbsp of oil, so it turns out a thick paste.

How do I make pasta with basil?

Cook the pasta until “al dente”, and blend the basil, Parmesan, pine nuts and garlic with 1 tbsp of olive oil and a pinch of pepper in a blender. Toss the pasta with the sauce in a deep bowl and divide among plates.

Can I make pasta with basil and cream?

There is no cream in this recipe: the sauce is thick thanks to the Parmesan. For a more delicate sauce, add 2-3 tbsp of cream to the blender.

What can I cook with basil?

Sauces first of all: basil sauce, pesto for pasta with pesto, garlic basil sauce for pasta with broccoli. Basil goes great with legumes, tomatoes and cabbage, you can flavor vinegar with it, and dried basil is made into seasonings that replace black pepper.
