
New Potatoes Stewed with Beef - Step-by-Step Recipe with Photos
Everyone learns as a child that there are potatoes and there are new potatoes. The potato is a plant of the nightshade family, and its tubers are one of the most important foods we have.
The origin of the potato is well known: it was brought to Europe from the American continent in the age of Columbus by the conquistador and priest Pedro Cieza de Leon, together with the Colorado beetle. The word “potato” in many languages goes back to the German Kartoffel and the Italian tartufo, tartufolo, meaning truffle.
After Tsar Peter “introduced” the potato, people called it the “devil's apple”: by mistake they ate not the tubers but the green “tomatoes”, which are full of solanine, and whole families died of poisoning as a result.
Early summer is the season of new potatoes. They are an exceptionally healthy food, rich in vitamins and trace elements. New potatoes are especially valued for their high potassium content, which helps remove excess fluid from the body and regulates metabolism.
And cleaning new potatoes is a pleasure. Just scrape them with a knife or a stiff sponge. New potatoes are no good for frying. But boiling them is the best thing you can do.
New potatoes stewed with beef are exceptionally tasty. Young vegetables and dill add charm to the dish.
Ingredients

- New potatoes 0.5 kg
- Beef 300 g
- Dill 0.5 bunch
- Onion 1-2
- Butter 50 g
- Salt, black pepper, ground coriander to taste
Step-by-step recipe
- Clean the new potatoes by scraping off the thin, film-like outer skin and removing the eyes. Wash them thoroughly and cover with cold water so they do not darken. For the potatoes to cook evenly, choose ones of the same size.
- Cut the beef into small pieces and fry in butter. Cut the pieces the same size as for stewed potatoes with meat.
- Fry until browned, then season with salt and pepper and sprinkle with a pinch of ground coriander.
- Keep frying and add the onion, peeled and cut into thick strips. Fry until the onion is soft.
- Pour hot water over the meat and onion so that the liquid covers the meat, and simmer over low heat with the lid on until the meat is tender. Depending on how tough the beef is, this can take anywhere from half an hour to two hours.
- Add the cleaned new potatoes whole, without cutting them. Keep simmering for 20 mins. It is important that the liquid boils away completely and the potatoes and beef look like a thick stew.
- Add the finely chopped dill. Stir the potatoes stewed with beef and divide among plates.
- Potatoes stewed with beef are served hot as a main course for lunch.
