Italian cuisine is rightfully considered one of the best in the world, and probably one of the most fashionable. It stands out for its huge variety of ingredients, spices and seasonings.

For Italians, the most national dish is macaroni, pasta. It comes in every shape and size: it goes into soups, is served with sauces and cheese, baked, and stuffed with all sorts of fillings. You can make wonderful dishes with it: salads, noodle bakes, noodles with meat.

Italy is a maritime country, and its shores are washed by seas rich in marine life, from fish to mollusks, so it is easy to guess that seafood dishes come first on the list in Italian cuisine. Fans and admirers of Italian food will surely be glad to try Italian pasta with seafood.

Noodles with seafood are an exceptionally tasty Italian dish, just like any pasta with seafood. Unfortunately, we can only get chilled or frozen seafood, and as a rule it is sold already packaged. It is hard to make a dish from several kinds of seafood, because small portions are rare, and buying large amounts of each kind (mussels, squid, octopus and so on) is expensive.

But you can often find frozen seafood mixes. They come raw or already cooked. The raw kind is preferable, because seafood must not be cooked longer than needed, or it turns tough and rubbery. Seafood is usually boiled for just a few minutes, and it makes a tasty seafood salad.

Noodles

  1. Any noodles will do. Italian pasta such as fettuccine, pappardelle or tagliatelle works well. You need good-quality long pasta 5-15 mm wide.

  2. Cook the noodles. Pour 2 l of water into a pot, add 14 g of salt (7 g of salt per liter) and bring the water to a boil over high heat. Cook the noodles until done, following the time on the package. Drain the noodles in a colander and let the water run off.

  4. Prepare the seafood. Thaw the seafood mix, or cover it with water and bring just to a boil, then rinse. Once the seafood has thawed, you can cut it into small pieces or leave it as is.

  5. Add the seafood to the sauce of wine, onion and spices. Simmer over low heat for 2-3 mins. Be careful not to overcook it, or the seafood will turn rubbery. Remove the bay leaf.
