Kharcho soup — the best Georgian soup from beef and tkemali

Kharcho soup

I am wondering, who and when said that kharcho is made of mutton? It is same as to fill the Olivier salad with sunflower oil. It’s so unfair to treat this soup in such a way, and same the Olivier salad. Kharcho – is the Georgian national soup and it is made only from beef.

Usually, when the recipe is being specified, we mean the area of Georgia, from which this recipe has come from. There are Georgian style soups, megrelian style soups and other. But the real meaning of the soup has never been changed — it is a hot beef soup with tkemali and nuts. The soup should be spicy, with the great amount of garlic and herbs. It is much more thicker then those soups we used to know, and there is a rule for cooking it which has never been observed – «It should be half liquid soup».

Nowadays kharcho soup is cooked from different kinds of meat: lamb, veal and even bird’s meat. But you can clearly see from its original name that it should be cooked with a beef: kharcho (ხარჩო) – literally: beef soup, «derohis hortzi harshhot».

Kharcho always has an acid base – plum tkemali. While cooking it can be replaced with more usual for us – tomato paste. However, there is an opinion – not to use tkemali, and instead of it to use so-called «sour lavash». Lavash – is not a bread, as many people think. It is a dried pulp of tkemali or dogwood. The puree from fruits is being dried in the sun in the shape of huge cakes – pita breads. They are called – tklapi (ტყლაპი) – and you should break it into pieces, soak with sauce or add to the soup, or other dishes.

Kharcho often can be found in recipes – Tklapi, piece of palm. The second important ingredient is a walnut.

Let’s back to meat. Better do not add any lamb, pork or poultry. Only fat beef is preferable, or with a bone ( there is enough fat in it too). Kharcho soup with beef! Just like that! You can hear lots of fair arguments about what to add or not to add in soup. But don’t forget that Ukrainian borsch soup is totally different in every cooker. Take it easy.

Homemade kharcho soup is not difficult to make: the important thing is to use the right ingredients and keep an eye on the process, rather than chase authenticity.

Ingredients

2 servings

  • Beef (preferably with a marrow bone) 400 g
  • Water 1.5 l
  • Garlic 1 head
  • Carrot 1
  • Onions 2
  • Long-grain rice 3–4 tbsp (41–55 g)
  • Parsley, dill, cilantro (and mint, if you have it) 1 large mixed bunch
  • Tkemali (puree) ½ cup (100 ml)
  • Tomato paste (optional, for color) 1 tsp (6 g)
  • Walnuts (kernels) ½ cup (50 g)
  • Khmeli-suneli 1 tsp
  • Coriander seeds 1 scant tsp
  • Salt, black pepper, hot red pepper to taste

Step-by-step recipe

A rich broth

  1. Kharcho is not quick to make. It even takes a long time if you put your heart into it. Don’t rush.

  2. For kharcho, take a piece of beef with a marrow bone: it has enough fat, and the broth comes out richer.

There’s a lot of debate about the cut of beef. Fatty brisket is usually recommended. Once a friend from the Caucasus let slip that brisket is better for khashlama, while for kharcho you should take a piece on the bone. I checked, and he was right. Notably, young veal is much worse here than mature beef.

    Ingredients for kharcho soup.
  3. In a large pot, bring 1.5 liters of water to a boil and cook the beef in it as a whole piece at a gentle simmer. Cook it for a long time, a couple of hours at least. The broth should be rich and “strong.”

    Cook beef.
  4. Take the beef out of the broth, remove all the bones and cut the meat into pieces: big or small, it doesn’t matter. But I recommend cutting it into fairly large, portion-sized pieces.

  5. Return the cut beef to the boiling broth.

    Cut beef.

Tkemali and vegetables

  1. Peel the carrot and onions. Dice the carrot. In the Caucasus, carrots are not added to kharcho, so the carrot is up to you.

  2. Slice the onions into thin strips, not the usual way but lengthwise along the onion. This keeps the fibers intact, and the onion won’t turn to mush while cooking.

    Slice vegetables.
  3. Add tkemali to the boiling broth: this is the most important moment of the whole process. For two liters of soup, I recommend 2 heaping tablespoons of tkemali puree. Or cut up 100 grams of fresh cherry plums, pits removed. Or add a soaked 10×10 cm piece of tklapi. If you didn’t make tkemali or have already eaten it all, well, what can you do: add tomato paste.

Speaking for myself, I add tkemali and just a little (1 tsp) tomato paste, purely for color: I like red kharcho. The broth should be noticeably sour. You can adjust the acidity later with pomegranate juice.

  4. Let the broth come to a boil, and after 5 minutes add the diced carrot. Cook the carrot for exactly 10 minutes.

    Add Tkemali.
  5. Add the sliced onions, bring to a boil and simmer, covered, over low heat for half an hour.

    Add the onion.

Walnut dressing

  1. While the broth and vegetables are cooking, make the walnut dressing.

  2. Sort through half a cup of walnut (50 g) kernels, carefully picking out any bits of shell and membrane.

  3. Lightly toast the walnuts in a dry skillet until they smell pleasant; I recommend it.

  4. Grind the walnuts in a mortar until smooth and you see traces of walnut oil.

    Pounder nuts.
  5. Peel the garlic and crush it in the mortar, together with the walnuts if you like. It doesn’t really matter. Strictly speaking, you can simply grate the garlic.

    Shred garlic.

Rice, spices and herbs

  1. After the half hour, add the rice to the soup. Use long-grain rice. The rice should cook for exactly 10 minutes.

Long ago, when I was little, my father added rice to the soup, and it cooked into the shape of the letter “X.” Ever since, I’ve had a firm association: soup with X letters is kharcho.

    Add Rice.
  2. Only then add the walnut and garlic dressing and cook the soup for another 15 minutes. In that time the rice will be done. By the way, turn the range hood on full power, or the smell will draw everyone in the house and even the neighbors into the kitchen, and they’ll keep getting in your way.

    Add the nut-and-garlic dressing.

Have you noticed that we haven’t added any salt or spices yet? Only after the walnuts and garlic have cooked for 15 minutes do we start adding the spices.

  3. Add khmeli-suneli, 1 tsp, and on top 1 scant tsp of coarsely ground coriander seeds. Season with salt and pepper to taste.

    Spice mix.

Spices in this Georgian soup are the subject of much debate. Usually you need plenty of coriander: the seeds are coarsely crushed. You also need pepper, Imeretian saffron, bay leaf and coarsely ground hot pepper. Most cooks add the Caucasian spice blend khmeli-suneli, literally “dry spice.” It isn’t hot, but it is incredibly aromatic and spicy, slightly bitter. The blend varies a lot, but it usually contains dried herbs (basil, dill, mint, hyssop, marjoram, savory), hot red pepper, coriander, bay leaf and fenugreek. The “full” version is very complex; shortened versions are used more often.

    Add hops-suneli.
  4. Taste the soup for heat and make it hotter only to your liking by adding hot red pepper. Best of all, not powder but a hot pepper pod crushed in a mortar together with the seeds: a coarse grind.

  5. After adding the spices, simmer for exactly 5 minutes over low heat, preferably stirring. Don’t turn the heat up: the soup is already quite thick and can easily burn.

  6. Finely chop the bunch of mixed herbs: cilantro, dill, mint (if you have it), parsley. Let me put it this way: more herbs is better and tastier.

  7. Add the herbs to the soup and let it simmer for another 2 minutes.

    Add chopped fresh Herbs.
  8. Let the kharcho stand off the heat for at least another 5 minutes. Only then is it ready.

    Spoon soup on plates.
  9. Ladle the soup into bowls; everyone can add more heat and herbs to taste. Be sure to serve freshly baked lavash, and plenty of it. Or, much tastier, thin shotis puri, a crescent-shaped Georgian bread.

To Get It Right

Thick and spicy, as intended

Kharcho is much thicker than the soups we’re used to. I like it thick, with tkemali, walnuts and cilantro, and hot: lots of garlic, khmeli-suneli and coarsely ground hot pepper. If you don’t like heat, use less pepper: everyone can add more in their own bowl.

Sourness from tkemali, not vinegar

The acidity of kharcho is adjusted with tkemali, and occasionally with pomegranate juice. No vinegar. Additions vary from place to place: in Georgia you can find kharcho with prunes, but I make it with tkemali, and it comes out sour enough.

Onions for a big crowd

Many people can’t stand boiled onions in kharcho. That’s why I slice them lengthwise, along the grain: then they stay fairly firm and don’t fall apart.

Questions and answers

What ingredients do you need for kharcho soup?

Beef (preferably on the bone), tkemali, walnuts, rice, garlic, onions, khmeli-suneli, coriander and plenty of herbs: cilantro, dill, parsley. The carrot is up to you: in the Caucasus it isn’t added to kharcho.

Should the meat go into cold or boiling water?

Into boiling water: bring 1.5 liters of water to a boil and cook the beef as a whole piece at a gentle simmer.

When do you salt kharcho?

Together with the spices, after the walnut and garlic dressing has cooked for 15 minutes. Until then, no salt or spices go in.

Do you put potatoes in kharcho?

There are no potatoes in this recipe. Kharcho is thick enough on its own, thanks to the rice and ground walnuts.

Can you make kharcho with pork or chicken?

These days kharcho is made with all kinds of meat: pork, lamb, veal and even poultry. But the name itself means beef soup, and I make it only with beef.

I bought this soup at the Moscow Tbilisi Bakery if San Francisco's Russian district in the outer Richmond. I needed something soothing after a two days in the ER, where modern medicine once again saved my life. I couldn't eat anything solid but this rich thick soup with wonderful flavor did just what I needed.
